      I just made this. Totally delicious. Mine turned out a bit moist since I used ground coconut (and it was frozen).

      I made Linda's butter cream frosting with it. Totally satisfied my craving for chocolate. Mr. R also appears to like it.
      Call me Suzy, Suzy-Q or Suzanna Banana - but let's not talk about bananas too much!

        Hi all,

        Probably silly question but the 1 TBS cream, is this "cream" cheese or heavy "cream"
        Also, what's the cream cheese-splenda-vanilla icing??

          Tried this today! I made the coconut flour in my coffee grinder. The recipe was awesome. Probably the best low carb "cake" type recipe I've tried.

              OMG this was heavenly! I could not believe how wonderful the texture was - it really is cake. It was just what I needed at the close of the day to hit my 20 carbs (as if going under would kill me!) and I can't think of anything I would have enjoyed more.....of course now I'm dreaming of ....devil dogs!

                        Coconut flour is easily made, do you have a coffee grinder? Our store has 5 oz bags of store brand unsweetend coconut for under a dollar, and it grinds easily in the coffee grinder.

                                I tried this and it was good - I ground the coconut a bit too much so it turned a little pasty - but it was fine. I will make this again for sure!
