  • Niki's Strawberry Clouds...

    I was very bored today so I decided to try and make something tasty So I took 5 Strawberries, cleaned them, hallowed them out a little (I just took out the white looking part in the middle), and cut the bottom off so the would sit up right on a plate. Then I put the cream cheese frosting inside the hole. I toped them off with the bottom of the strawberry that I cut off. I think another cute idea would be to save the strawberry tops (the leafy part) and top them with that. But I cleaned them and put them down the drain darn it!!! Here are 2 pics. They're a little blurry. Each Strawberry is a little less than 2 carbs. It really depends on the size of the strawberry and how much cream cheese frosting you put on each one. The frosting is 1 carb per table spoon and it doesn't need that much...maybe half of that. Here are the pics and Cream Cheese Frosting Recipe. Bon Apetite!!!

    This is the Cream Cheese Frosting Recipe I used for the filling

    Creamy Cream Cheese Frosting

    4 ounces cream cheese, softened
    1/2 cup granular Splenda
    1/2 teaspoon vanilla
    1 cup heavy cream

    Place the cream cheese, Splenda and vanilla in a medium bowl. Beat on high speed 2 minutes until fluffy, scraping down the sides of the bowl occasionally. With mixer on low speed, gradually pour in the cream while beating. Once all of the cream has been added, scrape down the sides and bottom of the bowl. Turn mixer to high speed and beat until thick and fluffy. The cream cheese helps stabilize the whipped cream and it should stay fluffy for a couple days or more. The cream cheese also prevents the cream from splattering all over the place while beating it.

    Makes about 2 cups

    Per 1/4 cup
    159 Calories
    16g Fat
    2g Protein
    3g Carbohydrate
    0g Dietary Fiber
    3g Net Carbs

    You single handedly are making me stop being worried about not being able to move on to the rungs (I'm scared) and start the veggie rung on monday my full month of clean induction anniversary.

          Awww, I'm SO glad everyone likes them You all made my night
          I'm going to make them again for the 4th of July with a Blue Berry on top instead of the strawberry bottom so they'll be Red, White, and Blue
          When I make them I'll put up pics for you guys

            You my dear are going to do WONDERFUL moving up!!! I have been a little like you. I keep moving myself up rungs, but never really increasing my carb intake. I am trying though. Have faith in yourself and this WOE That goes for me too!!! Oh, and congrats on your clean month of induction!!! That's AWSOME sweetie!!!

              See this is what I'm talking about!! Nicole you are absolutely awesome!! YOU are proving to people that this way of life works. No need to be hungry, no need to be afraid of the rungs, being active here, and posting ideas and 'planning' for the summer!!

                i am seriously grateful for the recipes on this site (especially YOURS, Niki!!). i love food, although for whatever reasons, i am not an adventurous cook. looking at these recipes really helps me alot! thanks!!

                    You know what's funny. Most of the things I cook are from Lindas site...lmao!!!

                    BUT, the strawberries with frosting and the cookie idea were mine

                    I have thought of doing something like that only because I LOVE it soooo much. It helps keep me motivated...truely!!!

                    The other thing I have been thinking of doing is making cooking videos and putting them online Bahahahahaha!!! That would be funny cause I'm shy I think I would laugh through the whole thing, so it would probably be funny to watch lmao!!!
