    I tried the recipe as is, and mine tastes kind of eggy. I'm not sure if I didn't add enough splenda, or it could be because I forgot to add the whites until after it was in the baking pan, and I didn't beat them.

        YUMMMM!! Hubby and i had the LC cheesecake at TGIF last week and it was delicious. My hubby told me at the time that i needed to find an LC cheesecake recipe so i can make one...i will try this one for him! thanks!

          Hehe, this topic hasnt been bumped in a while. Well, I'm going to use this recipe to take to x-mas *eve* lunch tomorrow. I was having the darndest time figuring out how well it would serve up, I didn't want people having to spoon it out or be messy. I've decided I'm going to try it in muffin tins and see how that comes out. I'm going the 3 packages of cream cheese route since I'll have to stack them probably to transport them over. Here's hoping for the best from this recipe! =)

            This is great!! I'm making another to take to Christmas dinner with my family. My sister-in-law is also on Atkins! For a change I also have tried it with a few drizzles of Walden Farms Carb Free, Sugar Free, Calorie Free Chocolate sauce. I think it is better plain though!

                  Hi,

                  I have the cheesecake in the oven right now. It smells so good. I am foregoing the topping as I am in induction and I love chocolate so I added 1 T. cocoa powder to the mix. I hope this tastes as good as it smells!

                      Now this does sound good. What do you folks think? If I slice it up, do you think it should freeze well? I don't need that much temptation in my frig.

                        OK so I made this recipe today to try it out for my New Years Eve party. I followed the recipe exactly except I added one more package of cream cheese & added some unsweetened chocolate. I mixed it with an electronic mixer instead of by hand. It was kinda puddingy and not as firm as I expected. It tasted ok but I'm a lil diassapointed. I wonder what I did wrong?....

                          probably the extra package of cream cheese and the chocolate has thrown out the proportions of the recipe and therefore it did not set properly. No doubt an extra egg would have brought things back into line. HAPPY NEW YEAR~!

                            Thanks! I will try that next time. Probably minus the chocolate too. However, the cake is kinda growing on me. And my splenda friendly guests seemed to like it alright.

                              Fold together and mix well.

                              In an 8x8 cake pan (I don't own a spring form pan) I spray with pam, and then sprinkle a bit of splenda over the pam.

                              *Edited instructions: Pour themixture into the cake pan, and place in preheated oven. Turn the oven down to 300° (or 310° if you can) and bake for approx 35 minutes. Check often, it is done JUST as it starts to turn golden brown, it is still a bit jiggly.

                              While the cake is cooling, whip up 1/2 cup of whipping cream, and fold it into 1/2 cup of sour cream.... add 1 tsp of vanilla and 2tsp of splenda (or more to taste, i do not need a lot of sweet). Spread the topping over the cake, cover with foil and place in the fridge until completely cooled.



                              The cake is fine without the topping, but if you can afford the extra carbs, it is a SPECTACULAR TREAT!!! I served it to my inlaws and kids with a tsp of splenda sweetened strawberry jam (smuckers) I like it just alone.


                              It works out to about 40 (or more if you use more splenda) grams/carbs PER CAKE so you'd have to do the math on serving size.... 8 pieces is a good serving size
                              Only on my 8th day but i CAN NOT WAIT to try this. good god it sounds awesome

                                Ok the first time I tried this recipe I was a little disappointed. So I tried it again with this mixture with the help of Linda's low carb website:

                                16 oz cream cheese
                                1/2 cup granular Splenda
                                1/2 cup of Heavy Cream
                                1/2 teaspoon vanilla
                                2 eggs

                                Hand mixed it this time instead of with a blender and no unsweetened chocolate.

                                I think it should taste much better just by the looks of it but will let you guys know how it really tasted! ....
