  • Mock Danish - needs cream cheese, egg, splenda

    I stumbled upon something wonderful and I wish I could take credit for it. It will take the edge off that sweet tooth and give you another dessert/breakfast option. It's called a Mock Danish and tastes very nearly like the real thing. I can say at first glance I thought this would be really terrible but I plunged my spoon in and was extremely surprised to find it was *quite* yummy!

    And here's the recipe:

    3 oz cream cheese
    one egg
    low carb sweetener (low carb syrups are nice!)

    Microwave the cream cheese until it is soft. Add the egg and stir until smooth. Add the sweetener, flavoring that you want. Pop it back in the micrwave and nuke it again for about another minute. the center should still look soft. (NOTE: the egg must be cooked fully, to avoid risk of salmonella) Eat it while warm or cool - I actually prefer mine chilled, its more dessert like for me. for a extra treat, I have iced mine with a combo of 1 oz of cream cheese, and vanilla syrup
    Btw - I tried mine with two packets of Splenda and it was just on target with sweetness. And though eating it warm/hot is good, it's alot better when it's been chilled. If I did my calculations right, each serving is about 6 carbs (2 tbsp = 30 grams = 2 carbs ... 1 oz = 30 grams ... therefore ... 2 tbsp = 1 oz and 1 oz = 2 carbs ... and ... 3 oz = 6 carbs)

    Please correct me if I'm wrong!

        tose ounces are weight not volume ounces so it is 3-6 carbs for the cream cheese
        .6-1 carb for the egg
        1 carb for the sweetner so that is a 5-8 carb meal.


        just remember you only have 4 ounces of cheese for the whold day you when you make this you may want to use less cream cheese, we have the mock danish recipe in the data base for altering to have less of the daily cheese alotment and other ways too like flax meal for more bread like

          When I've made mock danish, I use one egg to one oz. of cream cheese, plus 1 tbsp of flax meal. I also add cinnamon and stevia. This is very filling and more like "bread" like 2big said, and your cheese allotments don't disappear so quickly...

            I've made this recipe and it tastes like scrambled microwaved eggs with cream cheese with a little sugar on top. GROSS!!!

            I played aroudn with the recipe though and now it's my favorite thing ever. I take unsweetened coconut (low in carbs, high in fiber) and about ten or fifteen almonds and grind them up. Then add the ingredients from the mock danish recipe, and a little bit of vanilla extract, or banana extract for a yummy banana bread taste to compliment the almonds. It's the best thing ever. I also cook my on stove like a pancake instead of int he microwave. It has a cake-like texture.

              Hmm... that sounds like a great idea for pancakes... I never thought of using this particular base to firm mine up... thanks! My husband would love some banana almond mock danish pancakes!! lol

                I just made the pancakes for him... I used ground walnuts (small handful) and unsweetened coconut (I'd guess I used 1/4 cup) with a capful of vanilla extract, 3 oz cream cheese, 1 egg, and 2 packets splenda. I had to add a little water to thin the batter out so it'd pour. It made 6 smallish pancakes. He says that they are different than normal pancakes (I never really ate panckages even before this WOE), but that they are very good. He had them with a touch of SF maple syrup. This was my first time making pancakes so a couple of them were a little... mangled...

                  I just tried the mock danish today and it's great! I used 1 egg, 2 oz cream cheese (though I think it would be fine with a little less), a dash of pumpkin pie spice, and lightly sweetened with liquid vanilla stevia (I don't like anything too sweet in the morning, so I kept it very mild). I also added two tablespoons of ground flax seed. I love the flavour and consistency the flax adds. Plus the extra fibre is more than welcome in my diet.

                  Here's a tip that I think others may enjoy. I mixed the flax in with the egg as well as possible, then let it sit for a couple of minutes while warming the cream cheese. Then just lightly stir in the cream cheese, leaving it lumpy. Then you get little pockets of cream cheese, which taste so good. And when the flax is mixed well with the egg, it makes the final product less "eggy" overall, and more breadlike.

                  I also held some cream cheese aside and put a tiny bit of the stevia in it. I stirred in a little bit of softened butter, so it made a wonderful buttery/creamy icing.

                    What if I dont have a mixer? Would mixing it by hand work ok?

                        OK thanks! I have never made this or the relvoution roll because of this. I sure have wanted to! I just thought I would ruin the eggs? Well, wait do you think I could still make the revolution rolls? With the egg whites being whipped?

                          I know I'm a little late to try this, but I did this morning at it was wonderful. It was filling, cheesy and just the right amount of sweetness. I will have to bring the ingredients to work and make it more often.....it's kinda sad.
                          We don't have a microwave at home, long story....but one of my sons put metal in it and microwaved them....microwave seemed fine until the thing would turn on by itself when nobody was around! So we chucked that one, and have yet to get another one. The twins will be 4 very soon and they are tricky little things...I'm frightened they'll try the same thing. So I only have a microwave at work.

                            I make my mock danish with cinnamon and vanilla essence and splenda.. I also add a handful of psyllium husks for fibre and texture. I t makes it quick bread like. I also melt some butter over the top and sprinkle with splenda and cinnamon . YUM

                              I have heard of this recipe as far back as 2004 my other BB board for low carbers. I am made it tonight. I messed it up! typical. I was supposed to scamble the eggs first? the smell of cooked yolk is killing it. But, will re-try.
