    I literally just made this very simple, tasty, little inducton friendly snack as soon as I read this post and it takes a little getting used with the consitency but omg SOOOOO worth it.

      I usually make this with stirring the eggs, splenda and cinnamon together, and leaving the cream cheese in the middle, i put it in the microwave for 2 minutes watching it, and the egg mixture literally grows up around the cream cheese lol. Making it like a little cake with cream cheese in the middle.

        Okay think I have almost perfected the mock danish for my taste anyhow... thought I would share.

        2 TBS Cream Cheese
        2 Splenda Packets
        1 Large Egg

        I stick the cream cheese in my small microwave in a bowl for 30 seconds. Then add egg and splenda whip by hand till it is a smooth mixture. Microwave for 3:30 more and cool, and eat. I perfer it in the fridge for a bit myself.

        HINTS to a better Mock...
        *NO YELLOW GLOBS! I do it with the globs I hit a bite that tastes like a devil egg.
        *add cinnamon if you have it
        * more you mix it the better it will come out.

        p.s. I perfer 2 splenda packets because of my personal taste, one may be a start for most people, less carbs the better

          I'm eating it now. I agree, it is more like a cheesecake. I don't have yellow globs in it but, I'm not sure yet if it's something I'm going to like.

            I am considering trying this. Is it something you pick up and eat, or does it stay in a bowl? I think that is what I am missing. When I think "danish: I think something you can pick up and eat while you are driving down the road or something.

              From what I've made, it's not at all like a danish. It's something that stays in the bowl that you would eat with a spoon or fork. The consistency is more like cheesecake. I think you should try it.

                  Wow. I've read about this thing for two months now, and just tried it this morning out of desperation and not wanting to eat another scrambled egg, omelet, piece of bacon, etc. LOVELY! Quick, tasty, portable. In my mind, that makes it a perfect breakfast food! Kudos to whomever the genius was who discovered this treat.

                    Wanted to say that I could just hug you for that mock danish recipe! I added a little lemon juice and it was like a cheesecake crepe. ( I nuked it on a plate sprayed with no-stick, then rolled it up) YUMMY!! Seriously, it made my day... I even posted a message about it & gave you props!

                      I really want to try this recipe! am only on day 6 but i miss sweets, so this sounds yummy and easy and its induction friendly

                      I know this post is really late but really want to keep this at the top to remind other ppl who are on induction too
