  • Baked chayote "apples"

    Oh my gosh! I tried these for the first time today (first time I have seen chayote here) and they were absolutely delicious.

    Here's what I used:

    1 chayote, peeled and seeded and sliced into thin slices
    1 - 1 1/2 tbsp butter
    1 tsp cinnamon
    1 tsp vanilla
    1/8 tsp nutmeg
    1 tbsp lemon juice
    3 pkts Splenda

    Melt butter in pan over low heat and add the spices and stir well. Toss in the chayote slices and stir to coat well. Stir over low heat until bubbly. Slide it all into a pie plate and toss into the oven for 40 mins at 350 degrees (if you are doing an oven dinner) or toss into the microwave for 2 minutes. Top with low carb ice cream or whipped cream. Mmmm.

    Makes 2 servings.

    Also good over yogurt for breakfast. Haven't tried it yet but might be good in Mock danish too.

    About 85 calories and 5 carb grams per serving (not counting ice cream or whipped cream).

    I'm not fond of chayote, but that sounds delicious!
    Do you know what rung I would have to be in to enjoy that recipe?

        Did it today again and subbed apple cider vinegar for the lemon and it was even better!

          That sounds delish Jill! I just started Rung 2 (yogurt tomorrow), so I'm keeping an eye out for chayote next time I get to the store

              I had my first chayote during the veggie challenge -- I had the chayote baked "apples" and loved it....The molassas in the recipe made it taste so yummie!! Glad you finally got to try it Jill!!

                This little dessert is amazing!!!!

                There are two desserts I can eat due to food allergies....one is a rhubarb pudding sort of gelatin I make and the other is this yummy little creation.....I love it!

                I make mine a wee bit different....due to food allergies to dairy, I cook mine in a frying pan with bit of olive oil, I don't put the lemon in, I sweeten it with Stevia (I don't use the aspartame or the molasses)and I use both cinnamon and nutmeg....did I mention I LOVE this stuff?!??!?!?!

                I purchased some Chayote on Sunday so it's high time I make some more.

                I just wish I could figure out an easier way to peel these little guys LOL!
