2.5 minutes ended up burning mine...The elevation might have something to do with it? I am new to this whole having to adjust cooking times...

It was still edible, and clearly has very high potential, especially for a cereal.

I really wanted to try this for ages but never got around to buying the flax meal, i brought some this morning so am looking forward to trying it out tonight. Do you have to ground up the flax? i dont have a coffee grinder, will smashing them lightly with a rolling pin help at all? lol

I buy my flax already ground. There are flax seeds and ground flax. Perhaps you could return it for ground flax? Otherwise I imagine you might be able to put it in a plastic ziplock baggie and roll the crap out of it until it is fine enough... Hey, good way to get your aggression out!

I might have a go at doing this tonight. I need the fibre!

@focus - what did you use for parchment paper? is it the same thing as grease proof paper in the UK?

Not sure about flax either, Tescos have "Brown linseed". Is that the same thing?

                    Also what is:

                    2 T flax meal

Is this 2 teaspoons, or tablespoons?!

Any time a recipe uses an upper case T it means tablespoon. A lower case t would indicate a teaspoon.

Ah it all makes sense now!

I made a cookie tonight. Surprisingly I got it right first time, which I wasn't expecting!

Brown Linseed from Tescos (89p for 250g) and some Splenda!

Looks like something gross before nuking!

After 2 mins in the microwave I have something which looks vaguely edible!

Of course the question is how good did it taste? Well it does have the texture of a cookie somewhat, but lets be honest it doesn't taste like one really. I only used one teaspoon of Splenda (1 carb) so it wasn't that sweet. Not that this was a problem, it was still quite tasty in it's own way.

I will try have one of these most nights now just to help me get a bit of extra fibre. It's a winner

I think I spread mine out too thin or added too much water. Mine was kinda lacy looking with lots of holes. The taste was pleasant. I will try pumpkin or apple pie spice next time.

I made this again last night using greaseproof paper and this time it was too dry but it still tastes nice so will keep trying until i get it right. Might not have this everyday but whenever i need something sweet which is about twice a week . thanks so much whoever found this, it really is a lifesaver for me.
