I made this cookie and it was quite yum...But i do have a quick question...Has anyone tried making it with Country Crock (or a similar product)? Margarine is 100 calories a tablespoon whereas the Country Crock is only 50...Just food for thought.

Margarine often has trans fats. Country Crock has trans fats. These are unhealthy fats we should stay away from. Butter (like in the original recipe posted by the OP) is a much better option.

              Re: Induction Legal Cookie

Wow! I just made the recipe posted by the original poster...I just substituted pumpkin pie spice for cinnamon. It was amazing!!!! So happy I found this recipe on here...I will use it several times a week at first. I can't wait to modify the recipe to include garlic and cheese as someone else suggested!!

I cooked mine for 3 minutes and it was super crispy and yummy.

              2 T flax meal
              1 packet Spenda
              1/8 t pumpkin pie spice
              1 T butter
              2 T water
mix dry ingredients, add butter and microwave 30 secs. Add water, stir and place on a peice of parchment paper. Spread thin with an offset spatula or a spoon. Microwave on high for 2 1/2 to 4 min. till crisp. Let cool. You can also break this up and mix with cream.

                  Re: Induction Legal Cookie

Thanks for posting this recipe! I just tried it. I added extra cinnamon and a drop of almond extract on my first go, and microwaved it for 2 minutes. It tasted good, but didn't have the thickness or denseness that I crave in a soft cookie.

So.. I made it again, this time adding 1 scoop of 1g carb protein powder (in vanilla flavor, it was all I had), an extra tablespoon of flax, about 1/4 tsp cocoa powder, another packet of splenda, and about 1-2 extra tablespoons of water. (I didn't really measure, but these are about the amounts I used.) I microwaved this one for 2 minutes also and put some whipped cream on top when it came out.

This time, it was WAY more like a COOKIE! It was soft, warm, dense but airy, melt-in-your-mouth, and the boyfriend and I decided it became much better with the addition of protein powder.

(Opinions differ on whether protein powder belongs in induction or not, I know, but for 1g carb it makes these cookies into actual cookies.)

I really liked this recipe with the protein powder added, and I think I will start making it instead of the protein-powder based "not-brownies" as these are much healthier and have a better texture.

Edit: I just realized the "not-brownies" are from the Low Carb Friends Forum and not here, but they are basically protein powder, eggs, splenda, and a whole stick of butter.
