  • What are you guys cooking up Memorial Day Weekend?

    I'm gonna be hanging out on my pool deck. BBQing, swimming, and listening to some great tunes on my outdoor speakers. We have a mango tree and the ripe ones are ready to fall off, so my husband will be making his world famous Mango smoothies.

    I admit, Mango's are not a good Atkins choice but we only get to enjoy these amazing fruits for 2 months out of the year and from our very own tree! So up the rung I go for this treat!!!!!!!!

    Britt, my husband makes the smoothies with coconut rum and a dash of vanilla bean. Oh so good!!

    What are YOU guys up to????

    Looks like rain is in the weekend forecast. So, whatever it is I'm cooking will probably be indoors (unless the forecast changes).

    If I can cook oudoors, I'll probably try smoking a chicken on the grill. I copied a recipe out of a Chinese cookbook for tea-smoked chicken and I have all the ingredients (it will be a great way for me to use up the sugar that's been hanging around my pantry----btw, the sugar is mixed with the tea leaves and spices and put into an aluminum pie plate. As the sugar melts and burns, it ignites the tea leaves and spices creating the smoke.)

    If it continues to rain, looks like I'll try out the sauteed chicken cutlets in a shallot and white wine sauce from America's Test Kitchen.

        We don't celebrate memorial day..but this weekend past was our holida Victoria Day weekend (queen v's bday), AKA 'The May Two Four' ...we spent it up at the cottage, on saturday I barbequed 4 full pork tenderoins. Left them as is and brushed with a homemade bbq sauce i made with s/f ketchup, worcestershire, garlic powder, onion powder adn minced onion, and a lot of s/f maple syrup. They came out amazing! I'm gonna stock up on them when they go on sale again. I didn't realize they were so good on the bbq (i'd always butterflied and stuffed them and roasted).

        On sunday we had bbq'd prime rib steaks...no need to do anything to them..they're great just on their own!

              Well I'm thinking I will do my Garlic, Basil, Bacon Wrapped Shrimp on the Grill and a couple of Bacon Wrapped Beef Tenderloins to go along with the shrimp. A nice mixed baby herb salad with freshly grated Parmesano Reggiano and Olive Oil and Vinegar dressing. Fresh Local Strawberries for dessert w/ some whipped topping.

                  this is what I am going to make this weekend

                  Anticuchos
                  1 large sirlion steak
                  2 cloves garlic
                  4-6 jalepenos
                  1 cup red wine vinegar
                  1 1/2 cups water
                  2 teaspoons salt
                  1/2 teaspoon pepper
                  1 teaspoon oregano
                  1 teaspoon cumin
                  1 teaspoon ground red chile

                  in the blender grind jalepenos and garlic add all the other ingredients except the steak blend well. Cut meat into 1 inch cubes and cover with sauce...marinate over night or all day. Place meat on skewers and grill basting with leftover sauce to medium well serve with shredded cabbage and lime wedges. those who wish to indulge may have this on a low carb tortilla but I enjoy as is!!!

                  I am also planning on making jalepeno poppers these are to die for on the grill

                  slice jalepenos in half and remove seeds
                  stuff with cream cheese and wrap with bacon
                  chill for an hour or so to set cream cheese then grill until bacon is crisp
                  this is the ultimate appetizer with a cold low carb beer MMmm

                        The weather was good. So I smoked that chicken! It was good. I'll post the recipe in the Main Dishes Forum.

                        I grilled my usual stuff first (veggies, regular chicken, some steaks, etc.) then I smoked that birdie.

                        Next time I'll try it with a duck and some fish.
