  • eggies!!!!

    come on lets cook eggies ...what is your favorite egg recipe?....


    I love a fritatta
    10 jumbo eggs gently break up with a fork do not beat
    1 1/2 cup grated cheese (whatever you like ...cheddar or swiss is great for this)
    2 giant sweet onions
    olive oil or butter to coat the pan (be generous)
    2-3 cloves spring garlic
    a handfull of fresh chopped herbs like parsley, chives, thyme mint or whatever you have mix and match
    lots of fresh cracked pepper and a bit of hot red pepper...

    you want to slowly caramelize the onions in the oil/butter in a nonstick skillet that will hold everything ...be patient do not scortch or burn them just take your time and a tiny bit of salt to help remove the water and cook them down to that sexy caramel color!!! then add the garlic and herbs ..sprinkle all the cheese on top add the slightly beaten eggs and let them sit for about 10 min on med on the stove...when it appears the edges are starting to pull away finnish under the broiler in the oven.

    I love to leave this until it is room temp to eat and it is a fantastic lunch.....ok your turn what is your favorite eggie recipe????

    I can't pick just one I love eggs. They are the one food that made this WOE possible for me.

    Ilike an omelet made where you seperate the eggs beat the yolks with a tablespoon of cream
    Whip the whites until stff,
    Fold into the yolks with some grated cheese. Brown bottom in a cast iron skillet then broil until done.

      I like omelets.

      I like them filled with shrimp, crabmeat and cream cheese.

      or

      Filled with fresh sauteed spinach, garlic and cream cheese.

      or

      Mushrooms, cheddar cheese.

      or

      Fresh sliced roma tomatos, sauteed onion and green pepper, ham and cheddar cheese.

      I could go on and on and on LOL

        I'm an omlette girl too.

        I like them with

        tomatos, peameal (cdn bacon to the us folks) and swiss

        pepperoni, pizza sauce, peppers

        smoked salmon and cream cheese,

        bacon tomato and cheese

        feta, kalamata olives and peppers,

        just plain cheese (jalepeno montery jack , or Oka cheese are my favs)

        I love them cause you can pretty much throw anything in them. the easiest perfect breakfast! I have them pretty much every day.

            My favorite egg recipes in no particular order...

            Hollandaise sauce
            Eggs benedict (with gobs of Hollandaise sauce)
            Creamy scrambled eggs with crunchy bacon on the side
            Egg-tomato-onion salad (hard boiled eggs, wedges of tomato, and slices of sweet onion)
            Eggs over easy
            Spanish tortilla (shout out to Pau!)
            Flan or custard
            Egg nog
            Curried eggs (hard boiled eggs, sliced, and a curry flavored Alfredo sauce on top, toss under broiler to brown the sauce)
            Poached egg and a wilted frisee (or spinach) and bacon salad
            Soft boiled eggs with freshly grated black pepper and a sprinkle of salt

              Here's a "leftover" egg recipe! When I make eggplant lasagna, I mix the ricotta cheese with an egg and an Italian cheese blend. There is typically some of this cheese mixture leftover -- so I throw in another egg or two or eggbeaters, some half/half and make a weird quiche kind of thing! If there is left over Italian sausage -- I throw that in too! I make it in ramekins and bake in a water bath! Nice change from the usual omelet or quiche that I have for breakfast!

                I love eggs!

                Egg salad plain and simple or with a bit of grated onion and some black olives
                I eat eggs and sausage every single day and haven't tired of it in a year and a half!!!

                But I have this recipe I got from Sugarbusters I love to make this and eat it with a fresh salad. makes a delicious lunch or snack.
                Here is the recipe... but I also add green or white onion diced and a ton of chopped cilantro.
                I serve it with more cilantro and a dollop of sour cream.
                The first time I made this my husband said it was terrific but he didn't want to know what was in it!!! LOL he thought I had made it with flax!!!! I have no Idea where he would get and idea like that LOLOL.

                Green Chilies Cheese Casserole
                6 large eggs
                4 cups grated cheddar cheese
                2 -4 oz- cans diced green chilies

                Preheat oven to 350. Beat eggs in bowl. Add cheese and chilies. Mix and
                pour into a 9x13 pan. ans spread evenly across the dish. Bake for about 25 minutes, until set and lightly browned. Cut into 2 squares and serve.

                  OMG I FORGOT MY ABSOLUTE FAVORITE EGG DISH...

                  CHILE RELLENO

                  I just make it like a casserole

                  quantities depend on how much you want to make ...
                  spray a 9X13 glass pan layer like lasagna the following

                  roasted anaheim or poblano or mixed chiles (I put them all under the broiler blacken the outer skin toss them in a paper bag while I do everything else then peel and seed but do NOT rince them.

                  Montary Jack Cheese Tillamook is the best and I use a lot!!!! like a pound! well maybe not but a lot...

                  10 eggs more or less
                  salt pepper and cumin

                  just layer it up and bake it then top with sour cream and cillantro ...and fresh salsa...OMG I am so making this when my new oven comes!!!

                    Egg CURRY !!!

                    I learnt this from Fijian Indians. They hard-boil their eggs then deep fry in oil so it goes brown on the outside. You don't have to, but they are nicer.

                    then you go ahead and make your curry sauce base, and normally you would add potatoes, but I can do without. I do add tomatoes and serve up the dish with my fave veggies! I've seen the Indians also add peas, but these are also limited on Atkins.
