  • Beet greens and beets

    OK, so my vegan neighbor brought us a huge bag of beets. She told me to cook the greens in the oven w/ olive oil and salt til crispy, sounds good to me. But I was wondering if anyone had any other ideas.

    Also what's the best way to cook the beets themselves?

    Hi Moggies!!! I love beets and greens cooked together in a big pot I start the beets and then add the greens at the end ..or you can roast beets int he oven with butter salt and pepper ..amazing!!!!....beets do have a high carb count I believe?..but the greens are really low....you can eat beets raw as well!!!......they make some people pee red!!!! can scare you if you forget you have eaten them ...my son came out of the bathroom freaked completely out thinking he had a disease after a beet binge!!! :yikes

        I love beets. I don't know about the carb count though. When I made them, I cut the beets into cubes and roasted them. After they were done, I drizzled EV olive oil on top, sea salt, fresh pepper, and gorgonzola cheese. mmmmmmmmmmmm

          According to fitday, 1 cup of beets has 13 grams of carbs and 3.81 grams of fiber.

              Well, I was actually going to cook the greens for myself and the beets for John. He said he loves beets, but I don't think he actually know how to cook them.

                When you chop off the greens cut them off about 1 inch above where they join to the beet root. That will prevent them from "bleeding" is you boil them.

                Saute the greens---they are better than spinach imo.

                For the roots, scrub them really well. Don't peel them before cooking, unless you want a ruby colored cooking water. If you boil them, put them in a large pot, and cover them with water. Boil until a knife can be easily inserted into it.

                You bake them too: put them in a pan and cover with aluminum foil. Bake at 350 for 30-45 minutes. Peel them after they are cooked. I like baking them because they retain their flavor better.

                For the cooked beet root, you can slice them and toss them with sweet onions and vinegar, salt and pepper, add a strong cheese like goat or feta--yum!

                    Raw beets are soooo good in a mixed green salad. But Nursey is right. Beets are high in carbs. Some sugars are made from beets! Still they are so nutritious. A little in your diet is a great thing!

                      One cup has 8 net grams, not too bad IMO.

                      This food is very low in Saturated Fat and Cholesterol. It is also a good source of Magnesium and Potassium, and a very good source of Dietary Fiber, Vitamin C, Folate, Iron and Manganese.

                          I baked the greens in the oven on 425 with olive oil and salt until crispy like you can do with kale YUMMIE!

                          I boiled the beets themselves, until soft then sliced them and John put a little vinegar on them and salt and pepper, I only tried a little of the beets but they were delicious!

                              just for the record I LOVE BEETS! but I have never had one that didn't come out of a can ...so sad. I doubt I even know what the heck I am missing!
