I am not sure where I got this recipe but it looked good so I saved it.
Rhubarb Crisp
Description:
this is a great take along dish for potlucks or bbqs
Ingredients:
4 cups fresh rhubarb, diced
1/2 teaspoon salt
1 1/2 to 2 cups Splenda
3/4 cup protein powder
1 teaspoon cinnamon
1/3 cup butter
Directions:
Heat oven to 350 degrees.
Place rhubarb in ungreased 8-inch square baking dish. Sprinkle with salt. Measure Splenda, protein powder and cinnamon into a bowl. Add butter and mix thoroughly until mixture is crumbly. Sprinkle evenly over rhubarb. Bake for 40 to 50 minutes, until topping is a rich golden brown. Serve warm with whipped cream .

That's really interesting. The stuff grows all over the place up there. I remember picking it as a kid and chewing on a stalk and spitting it out because it was so bitter! A: Yes it is, assuming it IS wild rhubarb. Unless you are 100 percent certain, you should stay away from it. Actually, rhubarb is an immigrant, landing on both coasts in the mid-18th century by Europeans and Russian fur traders to Alaska. When I was in Alaska recently I came across a plant that was more than 6' tall and at least as wide! What you are seeing is really an "escape" from cultivation.
I'll probably just keep buying my frozen rhubarb..or maybe i'll take a pic of it and compare to some pics on teh net jsut to be safe.

Hmm, there is a rhubarb who's leaves are used for wrapping cheese, I wouldnt' think they'd use something toxic to wrap cheese with. Also, it says there and lots of kinds of rhubarb, and lots of things called rhubarb that really aren't rhubarb at all!

Not sure what kind that would be they are referring to? But they should post a warning. I just googled it and all the poison control sites have it listed as a poison. Though they say death is rare, it does make you very very sick and cause problems with breathing. LOL!! Moggies. In Florida, I grew up with wild sugar cane. Used to chew on the cane sticks and suck out the juices. There's an alcohol beverage they make with sugar cane and lime juice and I forgot what kind of liquor. I think the drink is called Guarapo or something like that. Very refreshing on a hot day!!

I have a couple of s pork tenderloin in the freezer and I'm thinking pork would be really good with a rhubarb glaze? Wonder what it would be like cooked in teh slow cooker (pork, bit of water, rhubarb, sweetener)...hmmm may have to play around witht that one.

I chop rhubarb into cubes, toss them into a saucepan with a tablespoon of water and let it cook down into a "jam". Add sweetener to it and you'll have a nice compote for pork or turkey or cheese (like Stilton or Brie).
