  • What's for dinner?

    I'll start.

    I had leftover rotisserie chicken, so I chopped that into chunks.

    I marinated eggplant, red onion, and yellow bell pepper in olive oil, then grilled.

    I threw everything together in a big bowl, added fresh basil, chives (that was my hubby's idea) and a little salt, fresh ground pepper, and raw chopped red onion (just a tiny bit.)

    The chicken was cold, and the veggies were hot, and it turned out really good.

    Tonight is my anniversary we had jumbo shrimp cocktails with sauce made from low carb ketchup, horseradish, worchestershire sauce and some snake bite hot sauce.

      Tonite for us is Smoked Pork Chops, and steamed zuccini and yellow squash.

        Chicken cutlets in a mustard sauce. Green beans and carrots or broccoli (depends which veggie looks like it needs to be cooked ASAP). 1/2 cup of homemade mint ice cream for dessert.

            I'm stuck working late tonight, so I have no idea what dinner is going to be! More than likely, it'll be a quarter chicken and ceasar salad from Swiss Chalet...

                A chicken puffy? (reminds herself to keep Ana away from her bird Puffy Dog).

                Tonight I'm having homemade turkey burgers..
                1.5lbs ground turkey (the kind that looks like ground beef not the kind thats frozen in a tube!)
                1 8oz package or feta cheese (I think the brand I got was Athenos? It's got bell peppers in it)
                1 medium onion, diced and sauteed
                1/2 a can of diced green chilies (optional)
                Seasonings to taste (I use cajon seasoning or season salt and season pepper)

                Mix all ingredients in a bowl, form into patties and grill. You can also freeze the patties for later, just wrap them in wax paper and then put in a ziploc baggie.

                I like to serve this with a small salad and green beans cooked in butter with hot sauce.

                  I'm not cooking tonight!!!! Picking up some tropical fish salad from my favorite sushi restaurant - here's what's in it:

                  Sashimi mixed with kimchee sauce & flying fish eggs (like caviar)
                  avocado chuncks and some mandarin orange wedges (i only eat two or three of the tiny wedges. the juice they give off flavors the salad)
                  on a bed of thin sliced cucumber in a ponzu sauce.

                  YUM!!! So good I get two orders! This is my ultimate comfort food. Can you tell I'm tired???? LOL!!!!!!!

                      Not sure where I got this but it is goood! I like to mix herbs in the mayo cheese mixture for a variety of flavors, some garlic powder and cayenne pepper are also way yummy!

                      Chicken Puffy
                      Mix together some grated parmesan cheese with some Hellman's or Best Food's mayonnaise, to make a thick paste. Place boneless chicken parts in a pan. Bake in a 350° oven till half-done. Turn over the chicken pieces and coat each thickly with the cheese/mayo goop. Return to oven and bake until done. The goop will puff up into a delicious coating.

                        Hmmm, that sounds like it might be really yummy! I'll have to try that one, maybe even tonite! ensive
