    cooking with wine?

    Is is okay to cook with wine since the alcohal burns off? I am on extended induction so alcohal is not allowed yet.

      Depends....The thing about alcohol burning off is sorta of a myth.
      The USDA did experiments on alcohol, cooking and it burning off. According to the chart in the below link, even after 2.5 hours of cooking, 5% of the alcohol remains.

      Think the wine in your stew boils away? Think again. USDA data reveals how much alcohol actually remains in food after flaming, baking, and simmering.


      Personally, I waited until OWL to add alcohol into my cooking.
