  • Mango Curry Marinade

    If you have ever tried Steels Gourmet Mango Curry sauce sweetened with Splenda, its just to die for! We use it to brush all kinds of meats and kibobs before and during barbequing, Today our health food store was out so hub and I (he's a gourmet chef) made our own. Its so good, we thought we would share it with you. The mango's have about 28 grams carb per 1 cup, but keep in mind you are just brushing the marinade on the meat, not drinking it! :yes

    2 ripe mangoes peeled, seeded and cut into pieces (puree in blender)
    2 oz vodka (optional) (use rice vinegar if you don't use vodka)
    2 squirts lime juice (to taste)
    1 tbsp medium curry powder (or more to taste)
    1 tbsp fresh grated ginger
    pepper to taste
    splenda til the tartness levels off
    1 jalapeno pepper
    1 tbsp minced garlic
    Blend all of the above on high.

    Ginger gives it a nice bite. We love this on all kinds of barbequed kibobs!

    I should mention, this recipe is for quite a bit, you could cut the recipe in half.
