I just can't say enough good things about Karen Barnaby's Low-Carb Gourmet cookbook. What a great book! Check it out.

I don't have the book in front of me so this won't be an exhaustive list, but, let's see... I'm eating the marinated flank steak with cumin-scented aioli even as I write this! I've made the cheese pancakes and the almond meal pancakes (wonderful with a few blueberries and cinnamon). The Korean style tofu was a big hit (I added ginger and a tiny bit of sweetener to make it taste like the tofu we used to get at the local food co-op). All the marinated meats are great. The blender Hollandaise was easy and tasty. And though I am not generally a big dessert eater, I made the brownies for Father's Day so I could join in the festivities. They are great with strawberries or raspberries and cream, though perhaps more like a sachertorte than like brownies. Probably the way I ground the almonds.
Anyway, it's a great book. It's real food that is naturally low-carb, not low-carb food trying to masquerade as something else. This is the way I like to cook, so it's great to find a cookbook author with a shared philosophy.F: 47 yrs / 5'3" Started 2/24/05

Thanks Susan, those sound yummy! We love to marinate and we're finally getting a new gas grill this weekend. I'll have to check that book out!

Karen also hangs out on the Active Low-Carber forum and has her own sub-section Karen's Corner where she posts but mostly answers people's questions on how to modify their favorite recipes or what ingredients to substitute. I don't know how she manages to be a full-time chef, write books and still answer dozens of posts! She's great!Lynn
