So as part of my (sad) gardening attempt this year I planted 2 stevia plants, one in a pot..one in the garden. Both are doing awesome! though i wasn't quite sure what to do with it now grown. I looked up recipes and found one for liquid stevia however it said to use scotch
as the liquid to extract it with!
Instead i took the leaves, chopped them up and added water in a pot just till covered. I brought it to a boil then lowered the temp and let simmer for 10 mins till it was reduced a bit. I put the mixture in a tupperware, covered and put in the fridge for 24 hours then strained out the leaves. It actually worked! I ended up with a slightly green stevia extract. I compared the taste with my store bought liquid and it's pretty much the same, just thinner. I usually use it to bake with..so the colour shouldn't really be an issue. could probably make it more concentrated by reducing more but mine seems sweet enough.
Just an FYI for anyone that uses stevia. it's $12 a bottle here for the liquid so i'm hoping if i bring the potted one in for the winter i'll have my own year round.
