OK we haven't done this in a while. And since I haven't decided what we're having for dinner I'd like to hear what everyone else is having to get some ideas!

Chef Boy Hubby pounded out some chicken breasts and marinated them in a baggie with some olive oil, fresh oregano and garlic in it for an hour. Then he removed them from the marinade and put them in a baking pan. He seasoned them and baked them in the oven until done. He then topped the chicken pieces with a brush of tomato sauce (not needed but we like it) and some teeny tiny diced tomatoes, onions, and topped with swiss and provolone cheese. baked that til cheese melted. It was so YUM! I had a side bowl of carb options spagetti sauce with 2 tbsp of sauce in it and I dipped my chicken in it for a saucier flavor.

Tonight is turkey taco salads with lettuce, tomato, black olives, onion, fresh salsa and sour cream. Good stuff!

That sounds good Star. When we have a cool day I'll have to try it. My husband was saying something about steak a little bit ago. Which is fine by me because he's the one who cooks steak when we have it. Yea, John has decided on Ribeye steaks on the grill for tonite, thank goodness because its about 97 degrees out and I really didn't want to have to heat up the house. So we'll have the steaks with freshly sliced tomatos from the garden and some grilled zucinni to go along with it.

We're having people over to celebrate so I think tonight is "fried" baked chicken. I believe the recipe is in the recipes section, but its basically chicken breast dredged in parmesan cheese and sprinkled with some spices...paprika's one. Probably a good sized "fix it yourself" salad (so the carb eaters can have thier crutons), my string beans (not good for induction, but it does have bacon fat and peices in it--so yummy!!!), deviled eggs and mashed potatoes. All together, not that bad of a carb eater/akins friendly meal, me thinks.
I'll be sticking to my tuna unless my tummy decides it can take some green beans.AD Dogs are Angels

OK I WANT TO PLAY!!!
tonight guys it is Cuban Pork Loin with a huge salad and home made mango salsa or you can do any salsa you like
1/2 cup sour orange juice or if you are not there you can use a mix of fresh lemon and lime juice
1/2 cup olive oil
a full head of garlic cloves, chopped fine
2 teaspoons soy sauce
2 teaspoons freshly ground black pepper
2 teaspoons of cumin seed pounded a bit
2 teaspoons dried oregano, crumbled
2 teaspoons of red chile
1 teaspoon salt
4 bay leaves
and a hunk of fresh ginger
I toss all this into the food processor whirl until smooth and then toss in a zippy bag with a nice boneless pork loin 2lbs is good I guess
Marinate 3 hours min and turn the bag over frequently ..when ready to cook either preheat oven to 400 degrees or fire up the grill! one hour before cooking take out of frig and let stand at room temp ... drain the pork disgard the marinade and pat it dry roast or grill for 30-40 min or until the center is 160 degrees transfer to a cutting board and leave stand for 10 min before slicing

My husband's good friend finally got notice that he passed the three tests to become a doctor. He was also accepted to work at Shands (really good teaching hospital) so its nice to have another friend around here. I don't really understand what he does, to be honest, but its something to do with radiation and cancer. Way over my headOriginally posted by BugabooIf you don't mind me asking...whatcha celebrating?
