What would be a good substitution for 2 cups of white flour in a pumpkin cookie recipe? Same with 1/2 tsp baking soda? Thanks

you can use nut flours (if you are on the nut rung?) or flax meal (god forbid but who am I to judge yuk)..some folks use those protein isolates or soy if you are on the legume rung....but watch the oven temp as far as baking soda or powder do you want to sub them because of carbs? because they have none and you can use them ?
if you are on induction however the only sub I can think of is the yukky flax or even some wheat bran ...
