  • Omelettes, Fritattas, Spanish tortillas

    I had the yummiest omelette this morning for breakfast. My basil has been growing very well this year so I made a batch of pesto over the weekend. So, this morning I made a pesto and muenster cheese omelette. The melty cheese and the bright notes of the pesto were a great combo. Tomorrow I think I'll toss some sun-dried tomato into it and goat cheese...

    We had omelettes for dinner last nite, with fresh from our garden roma tomatos, mexi-bell peppers and green onion, also added ham and cheddar! They were delicious too.

      Yum, my hubby makes a mean fritatta with yellow bell pepper, onion, pork sausage, and pepperjack cheese.

        um Semi stupid question: what's the difference?? Between omlettes, fritattas, spanish tortillas, I mean?

          Omelettes, frittatas and spanish tortillas are all egg dishes made in a skillet

          Omelettes are french and there are two ways to make them. One way is the French way where you shake the pan to form an oblong shape. The other way is to cook the egg flat then fill one half and fold the free edge over the filling.

          Frittatas and Spanish tortillas are basically the same thing. The beaten eggs are mixed with veggies, meat, cheese, etc. The mixture is poured into a skillet and cooked on one side. Then it is either flipped over to cook the other side or it's put under a broiler. The traditional Spanish tortilla contains potatoes.

            Eggs are perfect comfort food and Megs I am jealous of your basil!!!! I wnat to come eat some of your omelet right now!!!
            I make the end of week must go frittata ...any bits of anything I have left over are recreated into a wonderful dinner when I do not have a lot of time...I also like to make one for dinner and take it for lunch the next day.
            Asparagus and swiss cheese is great but my favorite is fresh roasted green chiles and Jack cheese ...lots of chiles lots of cheese...I am hungry .. I just realized because I worked so late...I did not eat dinner last night ...whoops not very good at all!!!! In fact newbies reading this ..the best way to screw this up is skipping meals so do not do it!!!!
