Omlettes is the only thing I fix for breakfast. I don't use milk.

I mix together piece of deli ham, 2 eggs, & 1 piece of cheese- yum

or use sausage instead of ham

Al, if you're inclined to use milk in your omelette, try a dash of heavy whipping cream! Fluffs it right nice!

My DH and kiddo were gone for the weekend ... I rare time, but I was HOME ALONE!!!! When DH calls to see how I'm doing, he can tell I'm doing very well and wants to cut his trip short! But as I explained to him, when I'm the one cooking and planning plus other work I do, it's a lot to do. So, in celebration of my temporary freedom, I've been eating omelettes for dinner in the evening. So cool, one pan ... one dish ... one fork.

I made one with jalapenas and avocado, sour cream and cheese Friday night! And last night I had leftover veggies - broccoli and red peppers with some sour cream and bacon in it. Also yummy. Lots of variations can be made. :yummy

I just mix in some water while I'm mixing the eggs - just enough to make it thinner. I would guess 1/4 cup to 4 eggs. Salt and pepper pick it up. I'll try the avocado and sour cream tomorrow night! Sounds delicious!

I could have an omelet 3x a day and not get sick of them.
I am a huge fan of Alton Brown on the Foodnetwork. The great thing about him is that he teaches the science behind the food. I don’t know what he’s talking about half the time, but I am fascinated by him.
Anyway, he did an omelet show last week and said adding water or milk is unnecessary. Here is his technique if you would like to give it a try.

3 eggs, warmed in hot water for 5 minutes
                  Pinch salt
1 teaspoon room temperature butter, plus 1/2 teaspoon for finishing omelet
                  1/2 teaspoon fresh chopped chives
Crack warm eggs into bowl, add salt, and blend with fork. Heat a 10-inch non-stick aluminum pan over medium-high heat. Once pan is hot add butter and brush around surface of pan. Pour eggs into center of pan and stir vigorously with rubber spatula for 5 seconds. As soon as a semi-solid mass begins to form lift pan and move around until the excess liquid pours off into pan. Using your spatula move around the edge of the egg mixture to help shape into round and loosen edge. Let omelet sit in pan for 10 seconds without touching.
Shake pan to loosen from pan. Lift up the far edge of the pan and snap it back toward you. Using your spatula, fold over 1/3 of the omelet. Slide omelet onto plate and fold over so that omelet is a tri-fold. Coat with remaining butter and sprinkle with chives. Serve immediately
