  • pizza sauce

Spent about an hour reading labels at the grocery store again. I was looking for low carb pizza sauce. Found one that was terrific made from egg plant (aubergine), red bell peppers and parmesan cheese. Just had to look a little farther than the tomato based products to find this one.

I cook down tomatoes cut in half, sprinked with salt and pepper and drenched in olive oil for about 3-4 hours on 250-300F. This melts down into a really lovely sauce which can be spiced up a bit with fresh garlic and herbs. Awesome for low carb pizza.

When you cook down tomatoes for pizza sauce could you tell me the amount of tomatos to the amount of olive oil you use? I want to make my own as I haven't found much in the way of low carb pizza sauce.

      Thanks Jan

The Carb Solutions spaghetti sauce has 5 net carbs per 1/2 cup. It tastes great on the lo-carb pizza, and the recipe only calls for 1/2 cup for the whole pizza anyway.

The Walden Farms Low Carb Marinara makes a fairly decent pizza sauce... although it is a bit sweet for my tastes.

I toss the tomatoes in the pan and drizzle them with olive oil until there is a thin pool of olive oil in the bottom of the pan. Some garlic cloves are also a nice addition to roast down slowly, but count the carbs.

Interesting... the dough for that recipe is entirely soy flour, which isn't necessarily the best from a carb control or a taste POV, but please, let us know how it turns out. I have been constantly trying to come up with a low carb pizza that tastes like a good slice you can get in the Bronx or Queens, but so far have not come up with much sucess.
