          Re: Lovely Jicama

I eat it raw: sliced into thin rounds, sliced into "french fries", cubed and used as the apple substitute salads, shredded or cut into a fine julienne for slaw.

I found a great recipe for jicama slaw in a cookbook.

I'm toying with the idea of using jicama as a toast substitute in shrimp toast.....

Mmmmm...I love Jicama. Hard to find decent produce in these parts though. Usually the jicama at the grocery store is MOLDY!

              Re: Lovely Jicama

Jicama should be nicely plump with very smooth skin.. no dimples bumps or bruises (sounds like a nice tummy!!!).. they are full of water so they rot easily ...if you look at the picture you can see a perfect jicama and if your store does not carry them ask..they are usually with the roots or over in the hispanic or Mexican sections of your produce section
they are very good as a faux bread if you slice a huge one thin thin the put tuna or egg salad inside....

Using it for sandwiches sounds good. I have a Spirooli (turns veggies into "noodles), and I bet it would be good if I spiral sliced it, and ate it with salt, chili pepper and lime juice. I bet it would be even better if I added fresh crab to it.

                        Re: Lovely Jicama

Barb, my Publix has the WORST produce ever! The precut lettuce always has brown liquid in the bottom of the bag, the avocados are rotten, the tomatos are always ugly and squashed and bruised and terrible looking. The cucumbers were shriveled last time I was there. It's so aggravating. During tourist season, there are a few farmers markets that are open, and have awsome produce, but they all shut down for the summertime. Too hot for outdoor markets I suppose. There's also a SweetBay near me, but their produce is only slightly better.

I didn't use to shop at Publix at all. But other than Walmart that is really our only choice anymore around here. And I won't buy Walmart meats. Publix is high, but at least the meat quality is better.
