    I'm sure someone will come along with actual instructions, but it tastes just as good if you make scrambled eggs with the stuff in it.

    I beat some heavy cream into the eggs, heat the meat in the pan, add the eggs, then mix in cheese and cook until done. I've heard that adding salt while cooking makes eggs rubbery, but I can't tell a difference, so I tend to add salt & pepper to the egg mixture so I don't forget to do it.

      Mix up 2 or 3 eggs with a little heavy cream and whip till nice and smooth. Put a little butter in a very hot non-stick skillet then poor the egg mixture in. After it gets a little bit solid add your toppings (things that melt first so they have a chance) and let cook for a bit, then fold it over with your spatula and turn down the heat so that it cooks all the way through.

          I find that a tablespoon of water per egg gives me lighter end result than milk products that tend to toughen the eggs. However I never have gone all the way to cream. I stopped at half and half.

          I prefer to use a high heat the whole way thru. I throw the eggs in and let them set for a few seconds then drag the edge in to the center with a spatula while tilting the pan to let more of the egg mixture fill the empty spot on the pan. (about four of those drags will do) Then I put my stuff in while there is a bit of runnyness left and let cook for a few more seconds. Then flip one half over the other (or do in thirds like I like to) , give it a few seconds, flip it all over and afew more seconds and plate.

          Omelettes should cook in less than a minute. Be prepared before you start. Naturally, if your fillings are cold, heat them first.

            I usually poor the eggs into the hot buttered pan and then add the fillings. After the eggs have mostly cooked through (often I will break holes in the omelette to allow more non cooked eggs to seep through next to the pan), I flip the whole thing over in the pan so that all my egg is definitely cooked (can you tell I grew up with a fry cook in the house? lol). Then I will throw some grated cheddar cheese and fold it in half, add some more grated cheese to the top, cover with a lid and let it melt. I usually don't mix anything in with my eggs (salt, milk, etc.) except for some cinnamon (sounds bad, but tastes oh so good).
