    My god my son called yesterday when I was on carb overload and told me "guess what ?..I have a case of Yakima peaches for you" well two things...one I have a brand new 30 inch double convection oven..and butter flour and sugar .2. the painful desire to produce something spectacular for my family and friends......so you know I could do some serious damage...but since I had about 8000 carbs yesterday and feel like crap! I need help ...is anyone at a level where they can eat peaches and if so what on earth can I do to enjoy them low carb besides just eat one smoothered with cream (and oh yeah I will do that at least one time..) however for Sunday dinner tomorrow I would love to bake..any ideas? ...and DO NOT SAY FLAX please!!!!!......

      I haven't ever tried this, but have you thought of using one of the low carb baking mixes and some splenda, and making a peach cobbler?

      I've eaten one peach this season and I ate it, yep, covered in cream.

        OK this is what I am going to do....

        they do not need sweetener so I am going to freeze some and take them to Santa Fe next month for my annual cooking fest with my family during the chile harvest and Fiesta......but for tomorrow I will just slice them and put some sliced almonds on top (evil nuts yes I am going to use them) bake them and serve with unsweetened whipping cream then take one bite and ..yup let everyone take the rest home!.....

          a cobbler with almond flour? I'm not sure what rung you're on but that could be good

            You can bake whole peaches like you would apples: spices and butter. If the peaches are really ripe and sweet, you won't need to add any sugar to those peaches. Just remove peel the peaches, cut them in half, remove the pits, and sprinkle the surfaces with the spices. Put in a dish, then add a pat of butter in the pit area and bake until just soft. (Splash them with a good port or madeira if you have it before putting them in the oven)

            you can cut the peaches and freeze them. Then make a "lazy sorbet" from them whenever you want.

                We used to eat fresh peaches dipped in red wine with Grandpa when we were kids. That's my suggestion!

                    I was going to suggest the peaches and red wine, but got beat to the punch!!! Its sooooooooooooo yummy!!! Probably don't have the time, but my personal favorite is homemade wine (made with Welche's Grape Juice) because its so thick and sweet and oh so yummy. Course, if you do use homemade wine, I'd limit the amount.

                    Grampy always told us that wine was good (a true Italian man!) but us kids were limited to a peach a peice. I later found out that the homemade stuff can have twice or even more alcohol than the storebought. I'm not sure why.


                    Gee, thanks, now I want some Georgia peachs and grampy's wine. *grin*

                      My Italian grandpa made his own wine too, but from fresh grapes. He had a wine cellar in the basement. A glass of grandpa's wine would knock you on your hiney. It was sooo good, and strong. Everyone had to have a glass of wine with dinner at Grandpas house. I started getting wine when I was a todler, although it was only a spoonful.

                      I wish I had some of grandpa's wine now.
