  • Poor Mans Lobster

    Saw this on another site and thought it sounded delish and easy!

    Poor Man's Lobster

    I ate this a lot as a kid and am sooooo happy that I can eat it without guilt now! This is nice because it's adjustable to how many people you're feeding and great for those on induction still.


    Frozen cod filets (thick pieces work better)
    2 quarts of COLD water
    2 tbsp vinegar
    4 tbsp splenda
    Salt
    Paprika
    Melted Butter

    Put the frozen cod, cold water, vinegar, splenda, and salt in a large pot and place over medium heat. Bring to a boil (*it takes 30-45 minutes for this to happen) and then boil for 10 minutes.

    Remove fish from water and gently pat dry. Place on broiler pan and brush with melted butter then sprinkle with paprika. Broil for about 5 minutes. Serve with melted butter for dipping!

    It does sound delish.

    When I read the thread title I thought it was a thread about monkfish, which is also called "poor man's lobster" due to the appearance and the texture of the flesh. It's also a very yummy fish, that I love roasted with herbs.

      I was expecting monkfish too. I'm not crazy about cod, but I'll have to try this.

        I don't care for cod either, works much better with haddock. I've never heard of boiling it before, just bakie in the oven at high temp. I'll have to try this way.
