  • What to do with it..............

    I have a whole bag of unsweetened coconut that I am dying to do something with but what?

    I was planning on making a cheesecake and adding a cup into my recipe? What do you all think?

    You can use it as "breading" for chicken and seafood. You might be able to use it as a batter coating for fruit-fritters too. In that case I would toss it in a food processor and process until very fine then add eggs and cream to get a batter.

          I have a recipe for coconut macaroons I found it on another Atkins site about 2 1/2 years ago. It was posted by a lady named Kim.

          1/2 cup Atkins Bake Mix
          1/3 cup unsweetened coconut
          1/2 cup slivered almonds
          1 cup Splenda sweetener
          1/2 cup egg whites
          1/2 teaspoon almond extract
          1/4 teaspoon coconut extract
          3/4 cup butter -- softened


          Preheat oven to 375*F


          Combine all the dry ingredients{except Splenda} in a small bowl; set aside
          Cream the butter with the Splenda, beat in the egg whites & extracts.
          Add the dry ingredients & mix well.
          Drop by Tbsp. onto a greased cookie sheet.
          Bake 10 -12 minutes or until lightly browned.
          24 cookies; carb count per cookie:3.9 minus 0.3 grams fiber= 3.6 effective carbs

          I don't use Atkins Bake Mix for it though. I use soy flour or almond flour and it works just fine

            I have a recipe for Coconut Balls. When I make them, I usually have to hide them because everyone in the house eats them. I usually double the following recipe.

            1/2 cup unsweetened coconut
            1 Tablespoon butter
            1 Tablespoon heavy cream
            1/2 ounce unsweetened chocolate
            Spenda to taste - about 3 packets
            Optional - Almond extract to taste - just a splash

            Melt the butter and chocolate in the microwave until smooth. Add the splenda and cream, stir until well combined and splenda is dissolved. Add the coconut and extract. Roll into small balls and refrigerate until firm. Usually a couple of hours. The longer they stay in the fridge, the better they get.

              wow I just mix it with softened cream cheese and have coconut spread. there was a recipe for a macarron cake using almond meal, coconut and whipped egg whites with some sweetener and slow baked all night in the oven

                  I made a key lime coconut cheese cake all I did was toss the following into the blender
                  1 1/2 packages of softened cream cheese
                  one ground up whole coconut (get all the shell off if you do your own I missed some..YOUCH!)
                  1/3 cup key lime juice
                  3 jumbo eggs
                  tbl vanilla
                  1/2 cup Davinci Vanilla syrup
                  1/3 cup erythritol (spelling?... Scott should be proud of me right now )
                  1/3 cup heavy cream
                  mix in the food processor until smooth pour in a cheese cake pan ...you could make a crust if you like but the coconut in it makes it so firm that it seems like enough...
                  bake at 350 for about 35? min check with a toothpick ...serve with whipped cream that and a lime peel garnish it is beautiful and tastes wonderful!!!
