    How do you prepare it?

    I like to slice it in half longways, and bake it until just tender. Then once it's tender, sprinkle chopped tomatoes, fresh garlic, dill and oregano on it, and top it with feta, and stick it under the broiler for a minute to melt to brown the cheese.

    I also like to spiral slice it using my Spirooli (google it) and cover it with fresh basil, olive oil, garlic, parmesean cheese, and black pepper.

    How do you eat your zucchini?

    OMG zucchini is another fav...great recipe ....I have to get one of those spirooli's
    I toss tomatoes, garlic, olive oil salt pepper, oregano and LOTS of fresh grated parmesan together with sliced zucchini bake it at like 400 degrees until bubbley and done! the next day it is even better!!!!

      I like to let it grow to a rather large size then slice it the short way so that you have round pieces that are about the size of a big hamburger, then brush it with olive oil and sprinkle it with Old Bay seasoning and grill it!

        MOG, I didn't know it was possible to grow zucchini so large. With MOG, all things are possible

          LOL, yep, ours probably weigh a couple of pounds each, I'll have to weigh one now, you've made me curious.

            This is induction friendly. Converted from a regular recipe I had.


            Zucchini Bread

            2 eggs
            1/2 c. cannola oil (or whatever oil you want..that's just what I use)
            1 c splenda
            1 c grated zucchini
            1/2 c chopped walnuts (or not if your still on induction)
            1/2 tsp. salt
            1/4 tsp. baking powder
            1 1/2 c golden flax (should be ok with reg flax..I just had golden onhand)
            2 tsp. ground cinnamon
            1 tsp. baking powder

            Directions:

            1. Preheat oven to 325 degrees F (165 degrees C) Grease and flour a 8x4" loaf pan. (I just used spray Crisco in a non stick pan)

            2. In a large bowl beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts. Stir into the egg mixture.

            3. Bake for 60 to 70 minutes or until toothpick comes out clean.



            Is really good warm slathered with butter. Mmmm

              I do it a few ways:

              Cut up in chunks, with red pepper and onion (all cut the same sized chunks. Then tossed with olive oil, salt and pepper and grilled in a grill pan on the bbq. It's the best!

              stuffed: Cut in half lengthwise, scoop out the insides and cut/mash them up. and leave about a 1/4 ". i then put cooked ground beef mixed with the mashed zucchini, diced tomatoes, onions and sprinkle the top with cheese. bake in the oven about 350/375 for about 20/25 mins. also good with taco seasoning.

              big slices grilled on the bbq. Like MOG some of mine are the size of baseball bat's only cause i haven't been around to pick them been on vacation. They grow HUGE when left!

              dipped in an egg wash and 'breaded' with parmesan cheese and fried in oil. got this idea from MOG also works great for other veggies, shrimp, chicken tenders etc.

                Wow, I put zucchini in just about everything lately. I like to just preheat the oven, slice it into fry like strips, but some EVOO on the bottom of a cookie sheet, not alot and then kind of coat the zucchini with the oil and season it with grilling salt. Does it taste like fried, not really but they are delicious.

                  Fry mine in olive oil with seasoning salt and ground red pepper, but these sound way better,,, gonna have to try. To think I was missing out on the whole squash family prior to this WOE!
