  • Whats your favorite summer menu

    Today it's about 100 degrees out and I don't feel like cooking. What is your favorite summer easy to make menus. I need some ideas.

    Kabobs are my all time favorite thing. I havent figured out my marinade for low carb, but I need to get on it.. havent done those all summer.

    My used to be standard was

    olive oil, vinegar, splash of worcestire, splash and a half of soy, crushed red pepper, Lawrys spicy montreal steak seasoning, nad a dab of dijon.... add meat to bag and let sit... skewer with peppers, onions, mushrooms, baby toms and zuccini, and grill... mmmmmmm....

    have been sticking to just meat and veggies.. should figure out the carb count/way to tweak this, open for ideas.. mmmmmmm

    No wasted carbs.
    Water intake .5 -1 gallon.
    Exercise 60 minutes 5x week
    Get in the right veggies.

      Looks like an acceptable low carb marinade to me.

        Thought the worcetire had sugar? it tastes sweet to me... like I said, I have not attempted this since this last restart. Probably cause my family is used to having it served over rice. THAT would be a big (fat) NO... But I am thinking, now, maybe without the rice, maybe with some broccoli..

          I'd check the label on the wor.....(I don't know how to spell that, I call it Lea and Perrin's LOL) and see. If its like 1 carb a serving I'd use it. Everyone eats sausage, bacon and salad dressings with 1 carb per serving, I mean how much do you use for the whole batch? and how many servings are you making, I'm sure its a minimal amount.

            Thai Steak Salad. Cucumber, tomato, cilantro, celery leaves, dressing : a little lime juice & Thai fish sauce, very finely chopped hot chile. If you can add the carbs, some thinly sliced red onion, too - and of course grilled steak, in thin slices, on top of it all. Works with chicken, too

              that thai steak salad is my favorite!!! yum!

                We like porkchops or steak when it's hot out. Usually with a salad. I have no imagination I swear. The porkchops or steak get some meat tenderizer (if it's not going on the grill) a sprinkle of garlic powder, a few grinds of fresh pepper and some kosher salt and it's ready. If we have broccoli and cauliflower with it those get steamed and topped with cheddar cheese and sour cream. I think I need to start trying new things. Last night I made spinach lasagna from Linda's site. It's nice because it's made in the microwave. eta~well...finished in the microwave I should say.

                  Cold vegetable soup like cucumber-mint or fennel.

                  Grilled chicken or fish.

                  Cabbage salad (shredded cabbage toss with olive oil, lemon juice and a fresh chopped herb like cilantro, mint, parsley, etc.)

                  Dessert: Chilled fruit. Or "Lazy Sorbet" (toss frozen pieces of fruit into food processor and process with alittle cream until it turns into a sorbet)

                    Oh the sorbet sounds wonderful not2late! Why didn't I think of that? Yummmie, I can do that with my favorite fruit...raspberries!

                      Can the sorbet be done without a food processor? I don't have one cuz they're darn expensive. At least the kind I want. Would a blender be suffice?

                          Just adding alittle more detail to the lazy sorbet

                          Freeze the fruit at least 24 hours. Put into a food processor and pulse it a few times until the fruit is roughly chopped. Add alittle water (or booze like brandy or rum) and pulse again. Add alittle cream and process until smooth. Scoop it out of the food processor immediately because it might freeze in the bowl and you'll have a hard time getting it out.
