  • Pumpkin Recipes Wanted, Please

    Pre-Atkins, I would buy canned Pumpkin to make Pumpkin pie. Obviously eggs and sugar go into the Pumpkin Pie recipe.

    What else can we do with canned pumpkin on Atkins Induction? Unfortunately I can't get into the recipes ... something on the site isn't working correctly.

    Holiday Pumpkin Pie

    Pie Shell:
    1/2 Cup almond flour
    1/4 Cup macadamia nut flour
    1/4 Cup pecan meal
    1/4 Cup Splenda
    pkt Sweet-N-Low (mixing sweeteners gives a sweeter, synergistic effect!)
    4 Tbsp butter - melted


    Pumpkin Filling:
    1 can Pumpkin (not "Pie Filling" - it has sugar!)
    1/2 Cup Splenda
    1 Tbsp Brown Sugar Twin
    2 Eggs - beaten slightly
    3/4 Cup Heavy Cream
    1 tsp Vanilla Extract (Use high quality unsweetened!)
    1/2 tsp. salt
    1 tsp Cinnamon
    1/2 tsp Cloves
    1/2 tsp Nutmeg
    1/8 tsp Ginger
    1/2 tsp Allspice (optional)

    Prepare pie shell: Melt butter in a small bowl. Add ground nuts and sweetener. Mix well.Press firmly into bottom and up sides of 8 or 9 inch pie plate and refrigerate until firm.

    Preheat oven to 350°F. In large bowl, mix all filling ingredients in the order given.. You can adjust sweetness to your own taste Pour mixture into prepared pie shell and place in preheated oven until center tests done (about 45-55 minutes - ovens vary.) Allow to cool completely before serving.

    This pie must be kept refrigerated. This pie is at its best the 2nd day!

    Makes 8 servings. 8 net carbs per serving including crust :icondance
    I made this at Thanksgiving and didn't even put a crust under it and it was delicious, with real whipped cream topping. :yikes

        This pumpkin pie tastes so close to the regular pumpkin pie(with sugar) :yikes
        I sure like it. We didn't feel deprived at all during the holidays.

          Pumpkin Mousse

          1 can unsweetend pumpkin
          8 oz cream cheese
          4 - 8 packs of Splenda (depending on your taste)
          Dash of vanilla
          Pumpkin pie spice to taste

          Mix the pumpkin with the pie spice, Splenda, and vanilla. Add the cream
          cheese and whip until totally smooth. Spoon into custard cups and chill. Top with whipped cream sweetened with Splenda.

          WARNING: Makes 4 BIG servings. Could probably cut the servings in half and still be satisfied, bringing the net carbs per serving down to 4.

            Pumpkin Aloo

            1 can pumpkin
            onions
            garlic
            curry powder - 2 teaspoons
            oil
            salt to taste
            salted cod fish (optional)

            Fry the onoins and galic in a little oil, put in the curry power and stir until the flavour is released and the oil is absorbed. Add the pumpkin, mix well and simmer for 5 minutes.

            If you have access to salted cod fish (available in West Indian stores) then you can add some of it hand shredded. Add it just after the curry power and before putting in the pumpkin.

            To prepare the salted cod fish you will have to soak it for a hour or two, take out the bones and shred. Or if in a hurry, boil for about 30mins then take out the bones and shred.

            If using the salted cod then omit the salt ! Enjoy!

              pumpkin pancakes!

              Try adding pumpkin to the flax seed pancakes they are so much better this way! then add cinnamon ginger nutmeg and a little vanilla very good and you can take these to work!
