  • Sweet Synergy for SADIE and SCOTT123!

    I dedicate this sweet synergy to Scott123 the naturally sweet artificial sweetener guru! And SADIE the beautiful Goddess of Low carb baking!!!...It took a long time and a bunch of mindless arguing for me to try this....and all I can say is why did I waste all that time??? This is Sadie's almond cake made with 1/2 less sweetener than she called for I used 100% Splenda mixed with small amount 100% stevia. The cake is topped with fresh unsweetened blackberries I picked in my garden this morning and unsweetened heavy whipping cream ....enjoy!!!

    OMG that looks awesome!! I printed out that recipe today to bake tomorrow. I miss baking and have not had any luck with trying low carb baking, but THIS I am going to try!!

      What?!? Only two sweeteners? What is this, the dark ages?

      Kidding aside, it does look reeeeally good (the cake and the view).

      Btw, I broke down and bought sweetleaf stevia (the reigning favorite). It's official, the sooolite stevia is a little better, but neither is as good as ace k when combined with splenda. At least that's how my palate perceives it.

      I've been debating on whether to make sooolite my 4th sweetener. I happy with my existing recipes but the prospect of 'just one more' is tempting.

        I thought that would slip by you Scott I was going to use three but I accidently dumped to much stevia in and when I tasted the batter it was bitter so I doubled the cake and left the third one out ...hey but this is progress for me!!!!! .thank you so much!!!

              The next step - polyd. That's when the party really starts to jump.

              Btw, if you ever need help with calculating how much of each sweetener to use, just give me a holler. I've developed a spreadsheet that spews out a ballpark sugar equivalency based upon the potential synergy involved. Tracking synergy is a little tricky because the boost changes when the number of sweeteners changes, but I think my numbers are getting pretty close. Just tell me how much sugar (or granular splenda) you're trying to match, the sweeteners you're using and I'll give you the amounts.

                  btw I did get 4.0 in all my chemistry classes! Organic, Inorganic and bio chem ...aced them all!

                    Looks great. NL what variety of blackberries are those?

                    scott can you post the general formulas for your blended mixes.

                    On thing about stevia it seen some folk are more sensitive to the second chemical in it that causes the bitter taste then others. I'm sure we all remember that little genetic experiment in jr high bio when you were ask to lace the paper in your mouth and from the look on your face afterward folk knew if you were a detector of that particular chem or not.

                      Nurselady the cake looks awesome! I'm going to have to make another one soon...My problem is trying to stop myself from eating it all! though it does freeze very well..

                      scott , i'd like to see that spreadsheet too if you have it? i usually end up just going by taste (which doesn't always work) most times i use liquid or powder stevia and liquid sodium cyclamate for my baking...to save on the carbs. I find i can usually get those two, or stevia and splenda, to mix quite well.

                        2big/Sadie, at some point I'll be ready to either give people the spreadsheet and/or post general formulas, but my calculations aren't there yet. Most of the calculations began as guesstimates/theories of what synergy occurs when particular sweeteners are combined. The only way I know if my numbers are correct is if I get enough feedback supporting them. So far, the feedback I've gotten has all been positive, i.e. the level of sweetness in the final product 'works', but it's not enough feedback to make any sweeping claims.

                        It really has been a group effort. People tell me what sweeteners they have on hand, I give them a rough sketch of what I think should be the ratio and then, hopefully, they tell me if the final product is too sweet/not sweet enough. It's all based upon matching either the same amount of sugar in a sugar based recipe or the same amount of splenda in a splenda-only recipe.

                        I'm not trying to be controlling or be the 'keeper of the spreadsheet' I just don't want to post anything that someone might miscontrue to be final. Whenever I post combinations, it always from a perspective of 'I'm not making any promises, but try this' and, more importantly, 'this formula can and probably will change in the future'.

                        As I said to Nurselady, if you tell me what sweeteners you're working with (and, if you can, the recipe you're using them in), I can come up with recommendations that I think will be pretty close, but I'm not going to post set formulas or share the spreadsheet quite yet.
