  • Have you tried chorizo sausage yet

    Ok, this has got to be my all time favorite sausage. It originated in Spain where it was made from Spanish paprika but the folks in Mexico quickly adapted the recipe to suit their taste for spice and Mexican chorizo is mild to OMG hot hot.
    If you haven't tried it, do you.
    It comes like any sausage, links or bulk, it can be soft or hard, but regardless, break in up in a pan, scramble it with eggs and serve with salsa or cubed avocados or sour cream, or rolled up in a low carb tortilla.
    Its delicious.
    Migas with Chorizo

    1 pound bulk chorizo
    10 eggs, beaten
    2 medium tomatoes
    1 1/2 medium onions, chopped
    8 corn tortillas, cut into 1 inch squares
    2 serrano or jalapeno peppers
    2 tablespoons chopped cilantro
    2 cups jack cheese, grated
    4 tablespoons butter or oil

    I loved chorizo when I had it in Mexico. But when I bought it here and tried to cook it, it turned to a disgusting mushy substance swimming in red grease. YICK. Is there something special we should look for on the label? I have a wonderful huge Mexican grocery store nearby, but I'm afraid to buy any and have it end up like the last stuff I bought.

      I've seen it here..and would love to try it but when i looked at the label it seemed to be fairly high carb. not sure what they put in it..i will be down at torontos St. Lawrence farmers market this weekend so i'll check there. they have the most awesome ethnic meat counters there.

        We love chorizo! I buy pork chorizo only and in links. We heat up the chorizo first (almost a whole link, but not quite) and then when it's almost cooked through we add between 5 to 6 eggs and scramble it all together. Makes a quick and delicious breakfast!

          MOG, every one is different. The hard links seem to have less grease, but think of it as healthy ATKINS fat instead.LOL I generally just drain off the fat when I get it. Talk to the grocer at your Mexican store and ask him which is best.

            I've found the harder links to be less greasy as well. If I'm not at my usual grocery store I'll buy the pork chorizo that seems to be the most popular. I wish I could remember the name of my usual brand...although I doubt it would be all the way over in NC.

              Hi, I almost every morning have chorizo with eggs for breakfast, if you find it where you live, i recomend "Turkey chorizo FUD", made from turkey and isolated soy protein, no sugar added.

                  I love chorizo!!! Over here, most chorizo is made with flour, so we gotta be careful with that. My local Fry's has an in-house made kind that doesn't have flour.

                  I've been experimenting with making a crustless quiche but with chorizo. It's yummy!!!

                      I love chorizo. Great flavor enhancer for things like stews--especially with my "paella" seafood stew.
