  • Veggies you can put in tuna

    I'm on a fish kick (made feta-spinach salmon roast last night, had tuna for lunch today). I was wondering if people have suggestions of other chopped veggies -- or other things -- to add to canned tuna:
    • celery
    • mushrooms
    • cucumber
    • carrots
    • onions
    Anything else? Today, I used a regular size can of tuna and added in these chopped veggies: 6 slices of mushrooms, about 1/4 cup of chopped celery, and 1/4 cup cucumber, plus 2 tablespoons mayo. I put half that mixture on a plate (I love bulking up my foods with veggies; it looks like there's so much food!), topped it with a slice of Swiis cheese, and made a breadless tuna melt. Had some smoked salmon as well. Yummy lunch!

    What about

    bell peppers
    romaine lettuce
    iceberg lettuce
    arugula
    radicchio
    radishes

          I OD'd on tuna but when I do eat it now I fill it with lots of veggies and be sure to throw it on a mound of lettuce.

            Second the olives! I LOVE chopped green olives in my tuna salad.

              Capers. They don't bulk it up much, but they do add a nice flavor.

                  chives
                  parsley
                  (just about any herb you wish, really - as long as you like it)
                  just about any green stuff you wish, too (spinach, for example)
