  • Need Help W/ Broccoli Salad

    I don't know if this is the right section for this post, but here goes:
    My question is if this looks like an induction-safe recipe.

    2 Bunches of broccoli-chopped into bite size pieces
    1 small onion
    2 cups shredded cheddar ch.
    1 pd. bacon-very crisp and crumbled
    1 cup mayo
    1/2 cup sugar (splenda in our case)
    2 tbsp vinegar

    Combine in bowl and mix.

    If i kept the serving size small, does this look OK? It is pretty awesome stuff.

    Looks fine. Think about cutting down the splenda amount though. You will find that after having been on Atkins for a while it takes a lot less sweetener to make things taste noticeably sweet.

        I did make it, it turned out well, but the recipie made way too much-next time i am going to make 1/2 recipie. There's a lot of brocolli, so i'd say just one cup per day-thats what i did, but you may want to ask someone else with more experience.

          I make this all the time, just no cheese in my recipe!

          I make it from ½ a broccoli, that serves me for a few days....and it's an easy lunch too, I bring it to school all the time!

          The only thing I do different (except for the cheese) is, that I make the vinegar, splenda and mayo dressing, ad the chopped onion, and leave it in the fridge for an hour or two for flavour to develop.
          Then I break the broccoli into Bite size pieces like in the recipe, but I pour some boiling water over the broccoli. It makes them pretty and green, and I like them that way, not raw, but not at all cooked. Then I let broccoli cool off, and add to dressing. I dont add the bacon until I'm eating it, to keep it crispy!

          For my serving size (½ a broccoli) I use 2 tablespoons of vinegar, one tablespoon of sweetener and 1 deciliter of mayo (little less than half a cup)!

          Uh, I think I have to buy broccoli today....and I will try adding cheese like in your recipe! It sounds YUMMY :joy
          Is cheddar the best to use????

                Your right, it looks delicious AND HEALTHY. I would suspect that if you didn't go over your veggie or cheese limit you would be fine
