    Excuse my ignorance but what is the difference between Half and Half, full cream, heavy cream, whipped cream?

    We do not produce cream, it is an imported luxury. So, I was wondering if any of the above mentioned are interchangeable. I have an Atkins recipe for ice-cream which calls for heavy cream. Can I use any of the above?

    Hi Sharni -

    Half and half is half cream, half milk. It probablly isn't the best choice for your recipe. Full cream I've never heard of, but I know there is light cream and heavy cream and whipping cream. "Whipped" cream is already whipped, and most commercial onces have sugar and other stuff. Use whipping cream or heavy cream and whip it yourself. I'm not sure what's light about light cream, maybe it has a lower fat content but I don't think you can whip it into the same nice fluffy peaks as the heavier versions. For ice cream, I think any version of these three would work, but I've never made ice cream so I don't know.

      Thanks Sunny ! The whipped cream was in a milk looking carton and was thickish. No sugar added so I guess that is fine. The only other cream I see is in a tin from Nestle and it simply says "cream" !
