  • Finger foods for a party?

    Next Friday, DH and I are having some friends over for my birthday. Nothing big, just some food and some company. I already have a few ideas for things I plan to make (a fantastic spinach & artichoke dip recipe I have that you make in the crockpot!), but I was wondering what kind of ideas all you fantastic folks have?

    I'm not feeding everyone dinner - just finger foods, dips, some sweets, more than likely. But I'd like them to be Atkins friendly! I already have the cake down thankfully. (thanks not2late!)

    Toastless Shrimp Toast: follow this recipe http://www.chinesefooddiy.com/appeti...rimp_toast.htm But don't use the toast and don't use the cornstarch. Refrigerate the mixture and drop it into hot oil by the teaspoonfuls.

    Buffalo Meatballs: Make your favorite low carb meatloaf recipe. Roll into balls and bake or pan fry until cooked. Then heat up 1 cup hot sauce. When hot remove from heat and mix in 2 tablespoons butter, one cloved fresh minced garlic. Stir until the butter is melted then pour over the meatballs.

    Atkins Revolution Rolls Pizza mini-muffins:
    Make a batch of the rolls recipe. Into a mini-muffin pan put in the rolls mix (about a tablespoon and a half per muffin cup). Top with pizza toppings of your choice. Bake in a 350 degree oven until the muffins are golden brown.

    Atkins Revolution Rolls Mini-danishes:
    Follow the instructions for the pizza mini-muffins, but place a teaspoon of cream cheese mixed with sweetener and vanilla extract on top.

    (If you haven't noticed, the Atkins Revolution Rolls recipe is VERY versatile. You can make the jelly roll thing and cut it into rectangles/squares and dry them out in the oven for a cracker-like product which goes nicely with something like pate)

        Nothing beats a fresh vegetable tray when I go to parties. People always marvel that you can have veggies on Atkins! So make up a platter of broccoli, sliced green pepper, cherry tomatoes, celery, carrots and cauliflower. I always use ranch dressing, because it is high-fat and low-carb.

          and a cheese tray too! if you can find them..you can add sugar free cold cuts. i've done this and put out buns for the non-lc folks.

          Devilled eggs

          Actually I posted a recipe a while back from a magazine, and all it was: seed slice up a red pepper into about 1" thick strips, sprinkle with shredded cheese (i used pepperjack, they used parmesan) and microwave, on parchment paper for 1 min. they were awesome!

          also mini shishkebobs or satays (though that's a bit more work)

          I'm really gonna have to try some of note2lates revolution rolls recipes. they sound awesome
