After lurking for AGES here before starting, I read several times about egg-burnout, and since this is my first week, I wanted to find a way to make eggs so that I won't burnout on them quickly. Experimented all week with different ways to make them and finally came up with this one. It's so creamy and the flavors interact so well that I doubt I'll ever get sick of this one.
2 eggs (poached - I use a microwave poacher)
1/2 cup of baby spinach
minced dried onion (to taste, I guess. I use about 1/2 teaspoon)
1 teaspoon of butter
1 tablespoon feta cheese (mine has basil and sundried tomato in it)
1 tablespoon mayonnaise (I use Dukes)
Heat butter in a saucepan til melted and starting to brown. Add baby spinach and minced onion and cook til completely wilted. While it's cooking, plate poached eggs and sort of squish them up so they're in pieces of varying size. Also, mix feta with mayo. Put wilted spinach and feta/mayo mixture over the "squished" eggs and mix it together a bit.
This ends up having such a creamy consistancy and SO much flavor that I was surprised. I've also tried it with a couple of black olives sliced really thinly and sprinkled over the top. That's nice too, but I prefer it without them.
