  • The right bacon!

    Hello all, I am new to the Atkins diet as of yesterday and already on day 2 of induction I am sick of eggs for breakfast. I never liked eggs before so I'm trying to begin liking them. I want to have some bacon for breakfast but when I went to the store all I could find was bacon with nitrates or nitrites or whatnot. Where in the heck do I find the right kind of bacon to have? I need some variety! Help!

    Hi Jess,

    Nitrate-free bacon is *really* difficult to find and not an absolute necessity to sticking to Atkins correctly. What IS necessary is to find sugar-free bacon. The nitrate thing is because Atkins believed it unhealthy (which it probably is) but not because it would prevent weight loss.

    Boar's Head meats sells a sugar free bacon (along with lots of great sugar-free lunchmeats and 0 carb cheeses!), if you happen to have a store in your area that sells it. You can get an 800# on their web site to call and ask who carries it in your area.

    Here in the Cincinnati area, Krogers carries a store-brand sugar-free bacon that's really good. The one thing I find with sugar-free bacons is that they go bad faster than "normal" bacon -- so be sure and wrap it up really well after each use.

      Side pork is the cut they make bacon from, but with no curing at all. You can either do a light cure with salt and Splenda or just slice and fry as is. Delicious.

        Trader Joe's has Neiman Ranch nitrate free bacon.

          If there are Whole Foods stores near you, they also have nitrite free bacon.

          As for breakfast, I seriously recommend the flaxseed pancakes. I've never especially liked eggs either, but the pancakes are yummy, and even simpler to make than eggs.

            Bacon and many other cured meats, including ham are cured with sugar.

            However, in the curing process the sugar is eliminated and it does not become a factor when determining sugar and carbohydrate contents.

            Point being, bacon is bacon, so it really is not necessary for people to be going to great lengths in search of "sugar-free" bacon. *rolls eyes*
