    o.k. this may be a really stupid question but...do you cook the stalk only of bok choy? Or are the leaves edible as well? Anyone have a good recipe for bok choy or something you like to eat it in or with?

      oh I use bok choy almost every day! you can cook the whole thing, stalk and leaves...

      here is my favorite recipe, it is for a nice spicy soup

      take some very thin sliced pork and brown it up in a soup pan, add in a kimichi base (get a sugar free on!)...not kimichi, the base for making home made kimichi, than some bullion, you can use chicken or vegetable, than bok choy...cook down until it is a nice soup and the bok choy is soft, than add in some tofu cubes, boil hard for 2-3 minutes to cook the tofu through....yummy!!!! be careful with the kimichi base, it is spicy, so if you have kids you might want to use just a dab...

        Bok Choy is wonderful, and wonderfully high in fiber too.

        Personally I employ an incredibly simple means of preperation: I just chop the entire plant (minus the bottom of the base, to get rid of the stem) into fairly large chunks, and I saute it with butter and garlic. I like mine to still be a bit crispy so I only end up cooking it for less than ten minutes or so.
