    The Black Eyed Pea's Squash Casserole is one of my faves....

    Can you help me mod it so it will work with Atkins?

    Black-Eyed Pea’s Baked Squash

    5 pounds medium-size yellow squash
    2 eggs — beaten
    1 cup bread crumbs plus additional for topping
    1 stick butter or margarine
    1/4 cup sugar
    salt, to taste
    2 tablespoons onion — chopped
    1 dash pepper

    Cut tips off squash and cut each squash into 3 or 4 pieces.
    Drop squash into a large saucepan with enough boiling water to
    cover.
    Return to boil, reduce heat and cook until tender. Drain in colander
    and mash.

    Combine with beaten eggs, 1 cup bread crumbs, butter, sugar, salt,
    onion and pepper.
    Turn into 3-quart casserole that has been lightly greased or sprayed
    with nonstick spray.
    Cover with light layer of bread crumbs.

    Bake at 350 degrees for 20 to 25 minutes or until lightly browned.

    I'd just substitute pork rinds for bread crumbs and splenda for the sugar. <shrug>

    Sounds good though. Adding it to my list of stuff to try!

      I don´t like too much pork rinds .... personally I think they give a different taste. I´d put just some cheese (or different cheeses) instead of bread or rinds. And 1 tbsp. Splenda should be enough.

        thanks. I'll try it today with parmesan cheese (not a whole cup! LOL) and just a tinch of splenda.


        I don't do pork rinds. They are scary.

          If it works, please post the substituted recipe you use. This sounds just like one of my favorite foods that I had years and years ago in a restaurant in Atlanta.

            if you were to only use a half cup of the very fine crushed pork rinds and mixed them in you would never know that they were there. they absorb the excess liquid put off by the squash and add a texture to the mix, just like the bread crumbs would.
