  • Why this WOE is NEVER boring!

    I *love* this WOE! It has caused me to get more creative in my cooking and with the way I look at food combinations! I sit down with the list of Induction foods and see what I can do to come up with new and different items.

    For example, last night I cubed up some jicama (1/2" cubes) and sauteed them in butter with about 1/4 of a diced onion. I was going to combine these with other things for a sauce over spaghetti squash, but didn't think the "crunch" of the cooked jicama was what I wanted, so placed the onion/jicama in a bowl and put it away in the fridge. I ended up cooking up some ground beef to use with a sauce - had extra without the sauce, put it in the fridge.

    This morning I'm looking for something to eat (I don't eat eggs). I spot the jicama/onion mixture and the ground beef. Hmmmm...

    Put them together in a bowl (proportions were about half ground beef, half jicama/onion mix), mixed them together, cubed up 1 ounce of cream cheese and mixed it in, and a shake or two of oregano.

    Microwaved it for 1:30 minutes on medium.

    It was WONDERFUL!! LOL! The crunch and sweetness of the jicama combined with creaminess of the cream cheese complemented the ground beef beautifully! It reminded me of Beef Stroganoff or a Greek dish! The next time I make it (and I will definitely make this again!), I will dice the jicama just slightly smaller, add some chopped black olives and perhaps just a hint of nutmeg and black pepper.

    Prior to this WOE, I never would have thought to add these ingredients together. Actually, I'd never even heard of jicama before this!

    The key to success on this diet (for me) is the willingness to be adventuresome and try new foods and new food combinations!

      OK - this afternoon will officially be PUT MY RECIPES IN THE RECIPE THINGIE DAY. Just cuz you asked so darn nice I have actually come up with several, so I'll go gather them together and type type type away this afternoon
