  • Flax Cookies a success with DH!

    I managed to get some golden flaxseed and so put some in my processor to make flaxmeal and tried out the flax cookie recipe today.
    I hadnt got any cinnamon so substituted 1 tsp ground ginger.
    I made 4 small cookies and gave my DH two without telling him it was atkins-legal.
    He loved them (so did I) and so it will be a regular treat for both of us now.
    I cant remember whose recipe it was but Thank you ADDB member for suggesting it. :hug

    I tried these on Friday night, and fell in love with them. It's nice to know that I can have a cookie when the urge hits...

        flaxseed is a terrific food.



        Janice has a great post in the FAQ's. You can find it in health food stores, some of the larger drugstores, especially if they have health food sections, and some Walmarts carry it as well.

        Many of us use it as hot cereal. I eat a bowl almost every day. It is incredibly cheap. The whole seed is best, and inexpensive (10- 12 dollar) coffee grinder will grind it for you.

          :hug Thanks Book - I laughed when I read it was grown in SD and I had never heard of it... :speechle: It talks about only eating it in small amounts... Do people get sick if they eat a lot?

            Is this the "induction legal cookie" recipe on the recipe site, or is there another one you tried?

              I don't know about sick, but too much fiber can make your system rebel. And it is very caloric due to the very high fat content, lots of calories. You can use flax to replace the fat in a recipe! So hey too much flax is not a great thing. Try to stay around 2-3 TBSP a day.
