  • Butternut Squash

    Until this afternoon, I had never eaten any kind of squash,I had bought some from the store and initially wanted to mash it with butter(found that I run out), so I decided to just boil it with salt. I was very surprised to find it tasted very much like boiled sweet potato(found my replacement for potato and yams). I am going to try making butternut squash next. Just wanted to let everyone know how great butternut squash is.

    Is winter squash legal? I know that pumpkin is and its about the same, and I love Hubbard Squash...but haven't shy'ed away because I didn't think it was Atkins Friendly

      Pumpkin and spaghetti squash legal for Induction, as are the "summer squashes" like zucchini and yellow squash. The other winter squashes, like acorn, butternut, are legal for the OWL phase.

      By the way, pumpkin is a great sweet potato substitute too. When I was doing Induction and even now, I used pureed pumpkin as a mashed sweet potato substitute and during pumpkin season, you can use whole pumpkin.

        I think we don't get to have butternut squash until the starchy veggies rung.

          I believe ButterCUP squash is much lower than others...
