Use good olive oil, 1/4 cup. Add one tablespoon of a nice tasting vinegar. The dressing will only be as good as the ingredients, so if you pick a bland, icky tasting oil and a sharp, harsh, raw vinegar, any dressing you make from those ingredients will taste terrible.
Add some fresh or dried oregano and crumbled feta too. Yum.

Greek dressings can also use lemon juice in place of some of the vinegar. Fresh oregano is great, as are some nice high quality anchovies (I have fallen in love with Oritz lately).
This thread is old, but I thought I'd share what I've been doing lately.
I've got some Cider vinegar and canola oil and mixed roughly half and half. I then loaded it with dried italian herbs like oregano, parsley, thyme, garlic powder, and my favorite all-purpose seasoning, Mrs. Dash. Added to that is a bit of black pepper and a few shakes of grated parmesean cheese, and I had myself a nice vinegrette.
But there was a caveat... I tried it immediately and it was what I call Blech!... with potential. I could tell that given time for all the flavors to mingle, it might mature into something special.
2 days later, after sitting in the fridge, I checked it and MAMA MIA! Just like Olive Garden's house dressing! Tastes great on a pile of Mediterranean salad mix. :joy
I will thow in my 2 cents as well, even tho thread is old. I have a good olive oil not extra virgin, red wine vinegar, fresh garlic (crushed) plenty of fresh cracked black pepper and a pinch of salt. Use the 2 parts oil to one part vinegar. It is a fantastic dressing! I also crumble some feta cheese in the salad as well. Good eating
