  • Pumpkin Soup

    The weather has cooled off and its Pumpkin time so I tried this recipe and it was delicious. Thought I would share, and put it in the cookbook all the time.
    Pumpkin Soup with a Crunch
    1 large onion, finely chopped
    1 T minced ginger
    1 clove garlic, minced
    some oil
    1 teaspoon curry powder
    3 1/2 cup chicken broth
    1/2 cup heavy cream with 1/2 cup water (to replace the milk)
    1 can 16 oz pumpkin
    1/4 cup sour cream
    2 T of pumpkin seeds

    Combine the onion, garlic ginger and oil Cook over med heat until onion is soft. Add remaining stuff except the sour cream and seeds and cook until hot. Ladel into bowls and garnish with the sour cream and the seeds.

      Is it safe for induction?

      This looks really good. If I left out the pumpkin seeds would this be ok for induction? Any ideas?

        Yes it would. Just watch your portion size.

        I find with pumpkin soup (or any kind of soup for that matter), alittle goes a long way because it's so filling.

          yep I love pumpkin soup.

          you could not add the cream and sour cream Baby Dreamer and put in in bowls to be added to taste at the table. then you could add one or two T if you can handle the special catagory foods in the induction chapter 11 section like cream and sour cream. To keep the soup from being too strong you could add more chicken stock or less spice.
