We're going the cheap and easy route tonite, Omlettes with green peppers, onion sliced tomatos from the garden! (yes! we still have homegrowns!) Ham and cheese. Of course bacon and sausage on the side.

I've made this several times, it's awesome! I have mine over 'riced' cauliflower (just cooked cauliflower cut up to very small rice sized pieces) i serve the family's over egg noodles. Leftovers are even better the next day!
I haven't had much appetite today, I think i may just have a chicken caesar salad...Jen, 39, F

Moroccan Chicken Stew
1 large onion, chopped
3 tablespoons of olive oil
Sautee onion in bottom of a soup pot until soft.
Add:
1 tablespoon of ground ginger
1 tablespoon of ground cumin
1 teaspoon of spicy paprika
3 uncooked chicken breasts, diced
Sautee until chicken is browned
Add:
32 ounces of chicken broth
2 chopped zucchini
and any other veggies you like (I use butternut squash)
Simmer until chicken and veggies are done.
This soup is great! You can change it up by using any veggies you like.

Here is what I am making:
Debbie's Cheesy Ranch Chicken (serves 4 @ 3.5 carbs each)
1.5 lb. chicken breast, boiled
8 oz. mushrooms, drained
1/3 c. mayo
6 T. sour cream
2 T. dry ranch dressing mix
2 T. heavy cream
1/4 c. parmasean cheese
4 slices mozzarella cheese
Preheat oven to 350. After you have cooked the chicken, shread it and season with salt, pepper and poultry seasoning. Put it in an 8X8 Pam sprayed pan. Then add the mushrooms. Mix together. Add the mayo, sour cream, ranch mix and cream. Stir well. Then, top with 4 slices of mozzarella cheese. Finally, sprinkle 1/4 c. parmasean cheese on top. Bake at 350 for 30 minutes or until it is browned. YUMMY!
I came up with this one by mixing this and that so if I am off on the carb counts, I invite a correction.
