    yummy dinner!!

    I just made the yummiest, super easy (took 10 mins) dinner, so I thought I would share it with you.

    I took a peice of white fish (cod is fine) cut it up in bite size peice and browned it up in olive oil. took that out of the oil and set aside

    than I threw in the olive oil a bit of garlic, egg plant and red and yellow peppers, stirfired that up, tossed in just a bit of crushed canned tomato (about 1/3 of the can) threw the fish back in, threw in some italian herbs and spices, salt and pepper...

    it came out so so yummy!!!

          I have been all about one skillet meals lately.

          I tend to just take some of whatever meat I have laying around, slice or chunk it up, add what fresh veggies I have, and then spice/sauce accordingly to what I have in the pan... easy clean up, easy cooking, can be quite tasty.

          Stir-frys, gumbos, stews, etc are all great bases to work from. I have also been on a huge Carnitas kick lately, I must've gone through an entire bottle of tequila, bag of limes, three whole pork shoulders, and many packages of lard trying to get all the ratios just right...
