3 cups of Jicama cut into matchsticks
1 cup of celery, juliened
1/4 cup of fresh parsley
Vinagarette:
1 teaspoon dijon mustard
2 tablespoons lemon juice
1/4 cup of olive oil
You can add nuts if you're on the nut rung.
Mix everything in a bowl, chill, and serve as a side dish.
Very crunchy and good!
