  • Is Chicken broth good after setting out for 8 hours?

Just a quick question. I bought a carton of chicken broth and opened it, but didn't use, then resealed the cap. Eight hours later I realized that I had left it out. It stayed in a 78 F degree room for around 8 hours. Is it still good?

I would not trust it at all. That was plenty of time for microbe action. There is plenty of nutrients in broth for 'bugs' to feed on. Toss it!

Book actually understates the bacterial growth potential there. I would not use it.

However, if you want to use it, a good strong boil for several minutes will kill any bacteria that jumped in an multiplied. Leaving... Only thier waste products behind. MOST of this waste is harmless. Some is not. Botulism comes to mind.

Bottom line, it is very likely safe to eat after a good boil for healthy adults.
