  • DANGEROUS low carb recipes

    DISCLAIMER: newbies close this topic and read no further. return after you have gotten great control of yourself and your eating.





    Okay we all have found them, either here on ADBB in the posts and receipe section or on other low carb sites someone gave us the URL too. what low carb recipe is dangerous to your Atkins? you know it is low carb but the actual serving size just isn't enough of a serving size for you and you end up over eating it and messing up your Atkins? Or you have it too often or it gives you uncontrolled cravings and poof you hard work is gone up in smoke and you are off on an eating frenzy.

    Mine is NOT2LATE'sS cocoa and cream mixture. Megs discusses how wonderful it is with just one tablespoon of each mixed together in creamy decatence. Well when making it I figured i had the cals and the carbs if it was that good why not 2 of each and yep it is that good and that lucious in your mouth.soon it became 3 of each then 4 and I was out of cream and seriously thankful i hadn't bought the qt container my store now offers.

    Okay what's yours?

    That's specifically why that recipe only makes about 2 tablespoons. I know it's potential danger. I mean, you're supposed to eat it slowly and maybe with a tiny teaspoon, and and and take a couple of hours between each bite during which time you're walking a couple of miles and doing weight training......

    Let's see, what dangerous low carb foods do I dare eat......

    Oh yeah, a cheese cake cream.

      Ok, I do this thing with EV Coconut oil, cocoa powder and splenda that is DANGEROUS! It turns into this delicous fudgy, coconutty thing, that my hubby thinks tastes like an almond joy but better. Totally legal, and great for PMS, but it's hard to eat just one.

      Just mix up the above ingredients, and throw it into the fridge until it's solid-ish, (like fudge). Yumm!

          Cheesecake cream is a recipe I got from a Gary Rhodes cookbook. Rhodes is a UK chef. Anyhow, you use block of cream cheese. Soften it and beat it to lighten its texture. Add vanilla or whatever flavoring you want and add a sweetener of your choice. Then in another bowl, beat 2 cups of heavy cream until stiff. Then you fold the beaten cream cheese with the whipped cream. If you eat it right away it has a texture like a soft-serve ice cream. If you let it cool in the frig for a couple of hours, it gets a texture like regular ice cream. I've used rum extract and used it right away on fresh sliced strawberries....

              That's the dangerous sweet stuff I know. But since I'm a starchy carb junkie, the sweet stuff isn't a terrible trouble for me because if it's too sweet it makes me sick to my stomach. If it's too sweet and too fatty/rich, I really get sick to my stomach (always been a problem with me.)

              So for me the REALLY Dangerous Low Carb recipes are the "starchier" ones, like ratatouille. Ratatouille is a veggie dish made from eggplant, zucchini, tomatoes, onions and peppers (and pretty much whatever else you like, imo, although the purists wouldn't agree). I make this during the summer when all the veggies are at their seasonal peak. Oh and I take shortcuts making it too. The traditional recipe calls for sauteeing each veggie individually. Then combining them and baking them. I don't have time for that. So, I chop the veggies into approximately the same size pieces. Mix them with olive oil. Put them into a large baking dish and bake at 375 degrees F for about 30 to 35 minutes, stirring every 10 minutes so that the veggies cook evenly. When they are cooked I remove it from the oven and immediately toss on a combo of chopped fresh herbs like parsley, rosemary, oregano and thyme along with minced garlic. I also drizzle on some extra virgin olive oil. Then I lightly mix this and let it cool to room temperature. It can be eaten hot, cold or room temperature. The longer it sits in the frig the better it tastes because the flavors begin to meld. It's great as a side dish, as a filling for an omelet, as a filling for stuffed chicken breast or turkey or pork rolls. I've eaten it as a topping for the Bikergoddess pizza. I've eaten it warm and topped with fried eggs. This is a dish that I can eat and eat and eat, which is why it's so dangerous for me. So when I do make it I have to carefully portion it OR I have to share it at a potluck or something. (My mouth is watering as I type this!) Comparatively speaking, this is a healthy dish--just veggies and olive oil. But it's danger for me.

              The other REALLY dangerous food for me is another eggplant based dish: moussaka. It's a meat, eggplant and tomato casserole--layered like a lasagne. I can eat and eat and eat and eat moussaka.

              It's the eggplant-tomato combo that does me in. Something about those two veggies combined makes me loose food control. I have no problems eating them individually or in combination with other food, but together----forget it.

                Not looking and wishing i hadn't ask what cheesecake cream is


                Oh man I know what you mean babout the eggplant dishes i can only make enough Ratatouille for the day or i will eat it and eat it till it is gone. Megs have you chopped it up seasoned it and froze it then defrosted it and baked it later?

                  Any low carb cheesecake. I try to only make them for holidays, but a couple of times i've had to do a 'practice' one with a new recipe. Even after thanksgiving/xmas dinner I have to take the cheesecake off the table and freeze it, or i'll be picking at it with my fork. I've thought with my practice ones my best plan was to cut it up in little 2" squares, and freeze them. problem is they even tasted good frozen .

                  Also I have an issue with sweet flax breads, like pumpkin or banana. I can't stop at just one slice. i seem to do better with mini muffins. though i try not to make either very often. i'm best to stick with the one serving microwave flax cake/bun.

                  And though this is not a recipe..it's still dangerous for me: natural peanut butter. I can just sit and eat it out of the jar with a spoon. I've had to force myself to stop buying it

                    Ooooh the eggplant.
                    Indeed it's a downfall for me.
                    I also have this thing for the right same combo, eggplant and tomato.
                    I make this spread..........well maybe I shouldn't tell you this, cause it is SO good.
                    Ok, twist my arm.
                    I cut up eggplant and tomato and a little bit of onion and some cloves of garlic (I have a garlic fetish too I think, aargh) and then saute this together with some ground cumin and a bit of ground coreanderseeds in olive oil.
                    When all is softened, puree it in a foodprocessor and it makes this WONDERFULL dip, it's so good and I really always have to make just a batch for one sitting, cause else I really can go on and on.........

                      Please tell me what to do with an eggplant. I got brave and bought one. Sliced it up and put it in parm and fried it and it was AWFUL! So bitter. Any other ideas for it?

                        Oh boy! Eggplant is wonderful...but can be an acquired taste. The ones they sell nowadays shouldn't be bitter, but you can try slicing them, putting them in a colander for half an hour with salt sprinkled over. That way the bitterness drains out. Then dry and cook. But be careful not to add any more salt when cooking.

                        Eggplant is sooo good any way IMHO: eggplant parmigiana, ratatouille, moussaka, trifolati (just cooked with garlic, onion, olive oil, a couple of chopped cherry tomatoes the last two mins...then a handful of FRESH basil thrown in the last ten seconds and another drizzle of extra virgin olive oil). Can also be julienned and microwaved as a great pasta substitute, with any sauce on top... oh heavens, the list goes on and on!

                        Biggest dangers for me are flax crackers (made with just flax, water and parmesan) spread with cold salted butter. Can't stop eating 'em! The other thing that is my real downfall is 'Duetto'... which is a shop bought mixture of gorgonzola cheese and mascarpone cream. It's layered and absolutely scrupmptious. Trying to stick to one or two cubic inches of this is really reall hard. I can eat it by the shovelful!

                        Dammit but this is a really dangerous thread... I've already saved it! Biggggg mistake! *chuckles...*

                          Can I get the proportions/measurements to that? I'm a newb at cooking / preparing food so please use small words.

                            I'll tell you what to do with egg plant, toss it to the birds. YUCK.....LOL Actually here in Japan they make it with a little soy sauce and sugar mix. I tried it with soy sauce and Splenda and the taste was the same, but I still am not a fan of eggplant.

                            Remember when Clouds were all the rage on this board. I made some and ate the whole recipe making myself nearly sick. I can't have them in the house. I even tried to freeze them, didn't matter, I ate them all just in one sitting.
                            I could still happily eat a whole recipe's worth without batting an eye.

                            I don't even want to know about cheese cake cream. It makes my mouth squirt just thinking about it.

                              Yep parmesean flax crackers are my danger food. I love them with cheese, butter or peanut butter!

                              Also fried kale with Old Bay seasoning on it is one that I have a hard time not eating too much of.

                              Alfredo sauce is another!
